2 cups cooked shredded chicken ((I use rotisserie))
6 ounces cream cheese (, softened)
1/4 cup salsa (, your favorite kind)
1/4 cup sour cream
1 cup shredded cheddar cheese
1 cup baby spinach leaves (, chopped)
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
salt and freshly ground black pepper (for taste)
15-20 corn or flour tortillas
guacamole, sour cream, salsa, hot sauce

Steps:

  • Add cream cheese, salsa and sour cream to a mixing bowl and stir until smooth. Add remaining ingredients (except the tortillas) and toss to combine. Taste and add more seasoning, if needed.

3 skinless, boneless chicken breasts, or more to taste
1 tablespoon olive oil
1 onion, chopped
1 cup sliced olives
1 (7 ounce) can chopped green chiles, drained
¾ cup water
1 (1 ounce) package taco seasoning
1 (8 ounce) package shredded Mexican cheese blend
10 (6 inch) flour tortillas

  • Place chicken in a single layer in the bottom of a large saucepan. Pour in cool water until chicken is covered by 1 inch. Bring to a boil over medium-high heat. 1/2 cup chopped roasted red peppers, drained (from water-packed jar)
1 teaspoon liquid smoke
8 (6-inch) corn tortillas
1 1/3 cups shredded pepper jack cheese
