CHICKEN TAOS

I got this receipe from an old little cook-book that use to belong to my mom. It was called "Man-pleasing Recipes". Anyone remember??? Well this receipe certainly pleased all the men in our family!! My father and 2 brothers just loved this, served with rice, or pasta, but rice was their preference, and a crispy salad on the side. I hope your men will enjoy as much as mine do.

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 7

1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1/2 cup water (or as needed)
1 (4 ounce) can mild green chilies
12 blue corn tortillas (or yellow)
2 1/2 cups longhorn cheddar cheese, grated
2 cups cooked chicken, skinned, boned and cubed

Steps:

  • In a medium saucepan place both soups, water and green chilies. Stir the ingredients together and bring the mixture to a boil. Turn off the heat.
  • In a large well-greased casserole dish place 3 of the tortillas in a staggered pattern. Sprinkle on 1/4 of the cheese. Add 1/3 of the chicken. Spoon on 1/3 of the soup mixture. Repeat the process two more times. Stagger the tortillas differently for each layer.
  • Top the casserole with a layer of the cheese. Preheat the oven to 350 degrees. Bake the casserole for 1 hour, or until it is hot and bubbly. Prep time does not include cooking time for chicken.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
  • Use a heavy-bottomed pot or Dutch oven: This will help to distribute the heat evenly and prevent the chicken from burning.
  • Brown the chicken in batches: Don't overcrowd the pot, or the chicken will not brown evenly. Cook the chicken in batches if necessary.
  • Cook the chicken until it is cooked through: The chicken is cooked through when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a variety of vegetables: This will add flavor and color to your dish. Some good choices include potatoes, carrots, celery, onions, and peppers.
  • Simmer the chicken and vegetables in the sauce: This will help the flavors to meld and create a delicious sauce.
  • Serve the chicken taos with rice or tortillas: This is a traditional way to serve chicken taos, but you can also serve it with other sides, such as mashed potatoes or roasted vegetables.

Conclusion:

Chicken taos is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a little time, you can create a flavorful and satisfying meal that the whole family will enjoy.
