1 teaspoon dried parsley
1 bay leaf
1 teaspoon seasoned salt (such as Lawry's)
1/2 teaspoon pepper
3 tablespoons all-purpose flour
For the Dumplings:
1 cup (or 4 1/2 ounces) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1 tablespoon shortening
1 tablespoon minced fresh parsley
1 large egg
3 tablespoons milk

5 cups water
1 teaspoon salt
1/2 teaspoon pepper

2 celery ribs, sliced

3 tablespoons olive oil
Kosher salt and freshly ground black pepper
5 cups chicken stock, preferably homemade
2 chicken bouillon cubes
12 tablespoons (1 1/2 sticks) unsalted butter
2 cups chopped yellow onions (2 onions)
3/4 cup flour
1/4 cup heavy cream
2 cups medium-diced carrots (4 carrots), blanched for 2 minutes
1 10-ounce package frozen peas (2 cups)
1 1/2 cups frozen small whole onions
1/2 cup minced fresh parsley
2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon sugar
1/4 pound (1 stick) cold unsalted butter, diced
3/4 cup half-and-half
1/2 cup chopped fresh parsley
1 egg mixed with 1 tablespoon water, for egg wash

  • Preheat the oven to 375 degrees F.

1/2 cup (1 stick) unsalted butter
6 medium carrots, chopped into 1-inch pieces
6 cloves garlic, thinly sliced
4 stalks celery, chopped into 1-inch pieces
2 large leeks, white part only, chopped into 1/2-inch pieces and soaked in cold water to remove grit
2 medium yellow onions, chopped into 1/2-inch pieces
1 tablespoon poultry seasoning
1/2 cup all-purpose flour
2 1/2 cups flour
3/4 cup milk, plus more if needed
2 tablespoons butter
1 tablespoon baking powder
2 teaspoons salt
2 large eggs
1/4 cup chopped fresh parsley

  • For the soup: Place the chicken pieces and the backbones in a large pot and cover with 16 cups water. Bring to a boil, then reduce the heat to a low simmer and poach the chicken until cooked through, 25 to 30 minutes.

8 oz baby carrots sliced
4 Tbsp butter
6 Tbsp all purpose flour

1/4 c skim milk

FOR THE DUMPLINGS
2 c flour
1 c skim milk
3 Tbsp butter

  • 1. Heat the 4 tablespoons of butter in a large dutch oven over medium heat. add the onions, celery and carrots and cook for about 5 minutes. Stir in the flour and continue cooking for a couple of minutes to cook out the flour taste. Whisk in the chicken broth and 1/4 cup of skim milk.
