A Low Carb (Keto) Creamy Chicken Soup Recipe with Lemon, Parmesan, and Spinach!

2 tablespoons butter, (or olive oil)
1 large sweet onion, (peeled and chopped)
1 cup chopped celery
1 cup chopped carrots
5-6 cloves garlic, (minced)
1 pound boneless chicken breasts
2 teaspoons lemon zest
1 tablespoon Italian seasoning
8 cups chicken broth
1/2 cup heavy cream
1/4 cup cornstarch ((2 tsp glucommanan powder for keto))
1 cup grated parmesan cheese
1 cup baby spinach, (packed)
1/4 cup chopped parsley
salt and pepper

Steps:

  • Place a large 6-8 quart saucepot over medium heat. Add the butter, onions, and celery. Sauté for 3 minutes. Then add in the carrots and garlic and sauté another 2 minutes to soften.
  • Place whole raw chicken breasts in the pot. Add in the lemon zest, Italian seasoning, chicken broth, 1 teaspoon salt, and 1/4 teaspoon black pepper. Cover and bring to a boil. Lower the heat if needed and simmer for about 15 minutes (covered) to cook the chicken.
  • Meanwhile, whisk the heavy cream and cornstarch (or glucomannan) together until very smooth.
  • Once the chicken has cooked through, pull the chicken breasts out of the pot with tongs and set on a cutting board.
  • Stir the heavy cream mixture and parmesan cheese into the soup base to thicken. Stir another minute, until the parmesan melts and blends smoothly into the soup base.
  • Use two forks to shred the chicken breasts. Then stir the shredded chicken, spinach, and parsley in the soup. Taste, then salt and pepper as needed. Serve warm, with extra parmesan if desired!

3 chicken breasts
2 tablespoons coconut oil
1 (6 ounce) bag spinach
2 large zucchini, chopped
1 medium onion, chopped
1 (14 ounce) can diced tomatoes
1/2 head cauliflower, chopped into florets
2 cups chicken broth
2 teaspoons oregano
1/2 tablespoon thyme
1 pinch ground red pepper
parmesan cheese (optional)

Steps:

  • In large stock pot, brown the chicken in half the coconut oil. Set aside.
  • Cook the chopped onion and zucchini with the other tbsp of coconut oil. Cook till onions are translucent.
  • Add bag of spinach, oregano, thyme, ground red pepper, can of tomatoes. Cook till spinach is softened.
  • Add the chicken broth and browned chicken. Add the chopped cauliflower.
  • Bring to boil, simmer for 10-15 minute
  • Add salt and pepper to taste.

2 cups chicken broth
2 cups water
1 teaspoon Dijon mustard
1 clove minced garlic
8 to 10 ounces fresh spinach
4 sliced country French or Tuscan bread
2 tablespoons of either green olive paste, pesto or sundried tomato puree
2 cups bite-sized chunks of skinned cooked roasted chicken
Salt and freshly ground black pepper

Steps:

  • Over high heat, bring chicken broth and water, mustard, and garlic to a simmer. As this is coming to a boil, de-rib and wash the spinach, then tear the leaves into 2-inch pieces. Lightly toast 4 slices of French or Italian bread. When toasted, spread with sundried tomato, pesto or green olive paste.
  • When the soup is at a simmer, add the chicken and simmer, uncovered for 2 minutes just to warm through. Then add the spinach leaves, and cook for a few seconds or until the leaves just wilt. Season with salt and pepper to taste.
  • Set 2 slices of toasted bread in the bottom of each soup bowl. Remove the soup from the heat, season to taste with salt and pepper and ladle it over the bread.
