3 (10 ounce) packages frozen chopped broccoli, cooked according to package directions (or 2 16 ounce bags)
3 boneless skinless chicken breasts, cooked & cut up
1 cup mayonnaise
1 cup sour cream
1/2 cup onion, finely chopped
2 cups cheddar cheese, shredded
1 cup sliced water chestnuts
1 1/2 cups Ritz crackers, crumbled
1/2 cup butter, melted

Steps:

  • Line bottom of 9x13 glass baking dish with cooked broccoli.
  • Top broccoli with cut-up cooked chicken.
  • Stir together mayonnaise, sour cream, and chopped onion and spread this mixture over broccoli.
  • Sprinkle the cheese over the previous layer, then layer with the sliced water chestnuts.

3 -5 cups leftover tortilla soup
2 -3 cups coarsely crushed tortilla chips
1/2 cup salsa (optional)
1 cup sour cream
1/2 cup sliced black olives
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350.
  • Pour leftover soup into a large casserole pan.
  • Dump tortilla chips into the soup, mix well.
  • Add salsa to soup & chips if the soup isn't very soupy; mix well.
  • Slather sour cream over the top.
  • Sprinkle on the olives.

1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 (10.5 ounce) can condensed chicken and rice soup
1 cup mayonnaise
1 tablespoon chopped onion
1 cup shredded boiled chicken breast meat
4 ounces buttery round crackers, crushed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl combine the cream of chicken soup, cream of celery soup, chicken soup with rice, mayonnaise, onion and chicken meat. Mix together well. Pour mixture into a 10x10 inch casserole dish. Sprinkle crushed cracker crumbs over the top.
  • Bake in the preheated oven for 30 to 35 minutes or until it starts to bubble.
