1 tsp (5 mL) sesame oil
1 dash hot pepper sauce
1 lb (454 g) boneless skinless chicken thighs or chicken breasts
1 cup (250 mL) snow peas
1 sweet red pepper

1/3 cup (75 mL) roasted cashews

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you stay organized and avoid scrambling during the stir-fry process.
  • Use a Wok or Large Skillet: A wok or large skillet is ideal for stir-frying as it allows for even heat distribution and quick cooking.
  • High Heat: Stir-fries are cooked over high heat, so make sure your burner or stovetop is set to high.
  • Stir Constantly: Stirring constantly is key to preventing the ingredients from sticking and burning. Use a spatula or wooden spoon to keep everything moving.
  • Cook in Batches: If you're cooking a large amount of food, cook it in batches to avoid overcrowding the pan. Overcrowding can lead to uneven cooking and soggy vegetables.
  • Sauce: The sauce is an important part of any stir-fry. Make sure to taste the sauce before adding it to the pan and adjust the seasonings as needed.
  • Garnish: Garnish your stir-fry with fresh herbs, such as cilantro, scallions, or basil, for an extra burst of flavor and color.
