Categories     Dinner

Time 1h

Number Of Ingredients 14

1 lbs chicken (I used legs, and thighs)
1 1/2 cup all purpose flour
1 tsp salt
1 tsp ground black pepper
1 tsp celery seed
1 tbsp onion powder
1 tsp poultry seasoning
1 tbsp garlic powder
1 tsp smoked paprika
1/4 cup vegetable oil
2 cups chicken broth
1 cup whole milk
2 tsp minced garlic
1 medium sized onion (chopped)

Steps:

  • Start off by making sure that all of the chicken is nice and clean.
  • Pour 1 1/2 cup flour into a large bowl, and add in seasonings : garlic powder, onion powder, salt, pepper, celery seed, poultry seasoning, and smoked paprika. Mix until well incorporated.
  • Coat the chicken with the seasoned flour, and make sure you coat all surfaces.
  • Reserve the seasoned flour
  • Pour 1/4 cup of vegetable oil into a large pan, then place the plan over medium heat.
  • Start adding in the chicken, but be sure to not over crowd the pan ( use a pan big enough to hold all of the chicken).
  • Cook the chicken until it is golden brown(DO NOT worry about cooking the chicken until done, because we will cook it some more).
  • Once the chicken is nice and browned, remove it from the pan. Leave the oil in the pan.
  • Toss in the onions, and cook them for about 2 minutes, then add in the garlic. Once the garlic is in the pan let it cook for an additional minute, then remove the onions and garlic from the pan.
  • Add three tbsp of the seasoned flour (the same flour that you coat the chicken with) to the pan. Stir in with the oil.
  • Next pour in 2 cups of chicken broth. Whisk in while pouring in the broth. Make sure there aren't any lumps.
  • Let the gravy cook for about 2 minutes ( still on medium heat), then pour in 1 cup of milk into the pan.
  • Let the creamy gravy cook for about 3 minutes, then start adding the chicken back into the pan, as well as the onions and garlic.
  • Make sure all of the chicken is coated with the creamy gravy.
  • Place a lid on the pan, then let the chicken cook for 30-35 minutes. Be sure to occasionally turn the chicken.
  • Once done serve the chicken with rice or mashed potatoes.
  • Enjoy!

Time 1h20m

Yield 4 servings

Number Of Ingredients 21

1 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon hot Hungarian paprika
Kosher salt and freshly ground black pepper
8 boneless, skinless chicken thighs
4 tablespoons olive oil
3 tablespoons salted butter
3 tablespoons all-purpose flour
2 Vidalia onions, halved and thinly sliced
1 tablespoon Dijon
1 tablespoon chopped fresh thyme
1 teaspoon hot Hungarian paprika
2 cloves garlic, minced or grated on a rasp 3 cups beef stock
Kosher salt and freshly ground black pepper
Serving suggestions: cooked white rice or Sunny's Garlic Red Bliss Mash, recipe follows
3 pounds red bliss potatoes
4 cloves garlic
Kosher salt and freshly ground black pepper
3 tablespoons butter, at room temperature
1/2 to 1 cup heavy cream, at room temperature

Steps:

  • For the chicken: Add the flour, garlic powder, onion powder, paprika, a nice pinch of salt and a few grinds of pepper to a medium bowl. Stir to distribute. Add the chicken thighs and toss to coat. Let sit in the bowl.
  • For the gravy: Add the butter and flour to a saucepan over medium-low heat. Stir together with a wooden spoon and cook, stirring, until a deep brown color but not burning, about 6 minutes. Add the onions, Dijon, thyme, paprika and garlic and stir to coat. Slowly add the stock and stir. Raise the heat to a simmer and cook until thickened like gravy. Season with salt and pepper. Keep warm.
  • Add the oil to a large pan over medium-high heat. When it begins to swirl, shake the excess flour off the chicken and add to the pan. Sear on both sides, 6 to 8 minutes per side, then place in the gravy and simmer, covered, to complete cooking, 15 to 20 minutes. Serve over rice or mashed potatoes.
  • Cover potatoes and garlic with water by 1 inch in a large pot. Bring to a boil, add salt and simmer until tender, about 15 minutes. Drain well.
  • Put the potatoes and garlic back in the pot and cook over low heat to evaporate the rest of the water. Mash in the butter with a potato masher. Add the heavy cream in stages until the desired consistency is reached. Season with salt and pepper.

SMOTHERED CHICKEN WITH MUSHROOMS AND ONIONS

Smothered Chicken With Mushrooms and Onions image

This hearty and delicious dish is actually diet-friendly! The recipe was printed in a local newspaper about 10 years ago; however, the recipe is identical to one found in the "Williams-Sonoma Kitchen Library: Healthy Cooking" by John Phillip Carroll. I recommend serving this over rice.

Provided by D. Todd Miller

Categories     Chicken Breast

Time 40m

Yield 4 serving(s)

Number Of Ingredients 10

1 large carrot
1 large yellow onion, thinly sliced
3/4 lb fresh mushrooms, brushed clean and thinly sliced
4 (4 -5 ounce) boneless skinless chicken breast halves
1/2 teaspoon salt (approximate, adjust to your liking)
1/4 teaspoon ground black pepper (approximate, adjust to your liking)
2 tablespoons vegetable oil
1/4 cup all-purpose flour
2 cups chicken broth (low sodium preferred)
2 tablespoons fresh tarragon, chopped (optional)

Steps:

  • Peel the carrot, quarter it lengthwise and then cut crosswise into pieces 1/2 inch thick. Set aside with the onion and the mushrooms.
  • Coat a large nonstick frying pan with nonstick cooking spray and place over medium-high heat. When hot but not smoking, add the chicken breast halves and sprinkle with salt and pepper. Cook, turning once, until browned (about 2 minutes per side). Transfer chicken to a plate and set aside.
  • Return the pan to medium-high heat and add oil. When hot but not smoking, add the carrot, onion, and mushrooms and cook briskly, stirring frequently, until the vegetables have softened and are lightly browned (about 7 minutes).
  • Sprinkle with the flour and cook, stirring constantly, until fully blended (about 2 minutes longer).
  • Add the broth and the tarragon (if desired) and bring to a boil, stirring frequently until slightly thickened.
  • Return the chicken breasts to the pan, pushing them down into the liquid. Reduce the heat to low, cover and simmer until the chicken breasts are opaque throughout (when cut open with a knife) and the vegetables are tender (about 10 minutes).
  • Season with salt and pepper to taste, and serve immediately.

Tips:

  • Use a large skillet or Dutch oven: This will ensure that the chicken has enough room to brown and the onions have enough space to caramelize.
  • Brown the chicken in batches if necessary: If your skillet or Dutch oven is not large enough to accommodate all of the chicken at once, brown it in batches. This will prevent the chicken from overcrowding and steaming instead of browning.
  • Do not stir the onions too often: Stirring the onions too often will prevent them from caramelizing properly. Allow them to cook undisturbed for a few minutes at a time, stirring occasionally to prevent burning.
  • Use a good quality chicken broth: The chicken broth you use will have a big impact on the flavor of the dish. Use a broth that is flavorful and has a rich chicken flavor.
  • Serve the chicken smothered with onions over mashed potatoes, rice, or noodles: This will help to soak up the delicious sauce.

Conclusion:

Chicken smothered with onions is a classic comfort food dish that is easy to make and always a crowd-pleaser. The combination of tender chicken, caramelized onions, and flavorful sauce is simply irresistible. This dish is perfect for a weeknight dinner or a special occasion.
