BROCCOLI, RICE, CHEESE, AND CHICKEN CASSEROLE
This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

CHICKEN, RICE, AND BROCCOLI SKILLET
My friend Christy and I were watching some movies one night and at intermission, decided it was dinner time. Her little boy, Damian was quite the picky tyke and we knew that feeding him would be what we based our meal on. Well, this was something we'd been meaning to try, so we gave it a go. Four adult and two little thumbs up! Easy, one large skillet, and not a lot of dishes to wash. It was also quick. This is something to throw together after working in the field all day too.

- Mise en Place: Before you start cooking, make sure you have all your ingredients and utensils ready to go. This will help you stay organized and avoid any scrambling.
- Use Fresh Ingredients: The fresher your ingredients, the better your dish will taste. If possible, use organic or locally-sourced ingredients.
- Season Your Chicken Well: Don't be afraid to season your chicken generously. This will help it develop a delicious flavor.
- Cook Your Chicken Properly: Make sure your chicken is cooked all the way through before adding it to the skillet. This will help prevent any foodborne illnesses.
- Don't Overcook Your Broccoli: Broccoli should be cooked until it is tender-crisp. Overcooking it will make it mushy and bland.

- Serve Immediately: This dish is best served immediately after it is made. This will help prevent the rice from becoming soggy.
