1/4 cup lemon juice
4 tablespoons olive oil, divided
3 tablespoons white wine
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 medium lemons, halved
Minced chives

Steps:

  • In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours., Drain chicken, discarding marinade. Thread chicken onto 6 metal or soaked wooden skewers. Grill, covered, over medium heat until no longer pink, turning once, 10-12 minutes., Meanwhile, place lemons on grill, cut side down. Grill until lightly browned, 8-10 minutes. Squeeze lemon halves over chicken. Drizzle with remaining oil; sprinkle with chives.

Tangy lime and coriander chicken pieces on lemongrass skewers. Perfect for a summer bbq, but can also be grilled indoors. (prep time includes marinade time, so may change depending on how long chicken is marinated for)

6 stalks lemongrass
1/3 cup peanut oil
1 tablespoon lime rind, grated
1/4 cup coriander leaves, coarsely chopped
6 chicken breasts
1/4 cup lime juice
2 small birds eye chiles, seeded and finely chopped
1/3 cup macadamia nut oil
1 tablespoon raw sugar
1 garlic clove, crushed

Steps:

  • Cut approx 3cm (1.2in) from the lemongrass (not the hard white part, the other end). Finely chop.
  • Combine chopped lemongrass, peanut oil, lime rind and coriander in a shallow non-reactive dish.
  • Cut each chicken breast into 4, and thread onto lemongrass skewers. The lemongrass skewers may bend, if this happens carefully use a knife to cut a slit into the chicken - it should thread on easily now.
  • Place skewers in with marinade and turn to fully coat.
  • Cover and marinade for 3 hours or overnight.
  • Cook skewers on lightly oiled bbq until chicken is browned and cooked through.
  • Combine dressing ingredients in a screw top jar and shake to combine.
  • Serve chicken skewers over rice (optional) and top with dressing.

8 Meyer lemons
1/2 cup finely chopped English hothouse cucumber
3 tablespoons thinly sliced scallions, divided
1 serrano chile (with seeds), finely chopped
Pinch of sugar
Kosher salt
1 1/2 pounds skinless, boneless chicken thighs, cut into 1 1/2" pieces
Freshly ground black pepper
1/4 cup plus 2 Tbsp. chopped fresh cilantro
1/4 cup plain whole-milk yogurt
1 tablespoon vegetable oil
2 garlic cloves, coarsely chopped
1 teaspoon cracked coriander seeds
1 teaspoon turmeric (optional)

Steps:

  • Using a sharp knife, cut all peel and white pith from lemons; discard. Working over a medium bowl, cut between membranes to release segments into bowl; squeeze in juice from membranes and discard membranes. Strain juice into another bowl. Combine segments, 1 Tbsp. strained lemon juice (reserve remaining juice for another use), cucumber, 2 Tbsp. scallions, and chile in a small bowl; mix well. Stir in sugar; season salsa with salt and set aside. Place chicken in a medium bowl and season with salt and pepper. In a mini-processor or blender, purée 1/4 cup cilantro, yogurt, vegetable oil, garlic, coriander, and turmeric. Pour marinade over chicken; toss to coat. Let marinate at room temperature for 20 minutes. DO AHEAD: Can be made 1 day ahead. Cover and chill. Let stand at room temperature for 30 minutes before continuing. Preheat broiler. Thread 4 pieces of chicken onto each skewer and transfer to a foil-lined baking sheet. Broil, turning once and watching closely to prevent burning, until browned and cooked through, about 8 minutes. (Alternatively, grill skewers over medium-high heat on a gas grill or over medium heat on a charcoal grill.) Transfer skewers to plates. Spoon Meyer lemon salsa over chicken. Garnish with remaining 2 Tbsp. cilantro and 1 Tbsp. scallions.
