1 lb cooked fettuccine
3 tablespoons olive oil
1 lb peeled deveined raw large shrimp
1 lb chicken thigh, cut into bite sized oieces
7 teaspoons creole seasoning
1 lb andouille sausage
1/2 cup diced green pepper
1/2 cup diced yellow onion
1 tablespoon minced garlic
1/2 cup chicken stock
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 cup heavy cream
1/2 cup grated parmesan cheese

Steps:

  • Heat 1 TBS of olive oil over medium high heat in a large saute pan. Season the shrimp with 2 teaspoons of the Creole seasoning. Place the shrimp in the pan and saute until almost done. Remove the shrimp from the pan and set aside.
  • Add 1 tablespoon olive oil to the pan. Season the Chicken pieces with 2 teaspoons of the Creole seasoning. Place the Chicken in the pan and saute until done. Remove the Chicken from the pan and set aside.
  • Place the remaining TBS of olive oil in the saute pan and onions and bell peppers. Saute, stirring occasionally, until the onions are translucent, about 3 minutes. Add the sausage and cook another minute.
  • Add the garlic to the pan and saute for 30 seconds.
  • Add the chicken stock to the pan and scrape pan to remove any browned bits that have formed in the bottom, about 30 seconds.
  • Add the thyme, 3 teaspoons of creole seasoning and 1/2 tsp salt and cook for 2 minutes.
  • Add the heavy cream to the pan and cook an additional 2 minutes.
  • Return the shrimp and chicken to the pan. Add the cooked pasta to the pan. Continue to cook the sauce and pasta, stirring occasionally, for about 3-5 minutes. Remove from the heat and add the basil and Parmesan.

2 bacon strips
1/2 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 medium onion, chopped
1 small green pepper, chopped
1 celery rib, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Worcestershire sauce
1/4 teaspoon hot pepper sauce
1 pound uncooked medium shrimp, peeled and deveined
3 cups cooked brown rice

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Crumble bacon and set aside. Saute the chicken, onion, green pepper and celery in drippings for 5-6 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer., Stir in the tomatoes, bay leaf, salt, pepper, Worcestershire sauce and pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. I combined a few recipes that I had and came up with this one. You can adjust the creole seasoning and add hot sauce to your tastes. The first time I made it, I couldn't taste the spiciness until after I let it cook for a bit so I added more Creole seasoning and it got way too spicy for my tastes. Please use caution! If you follow the recipe, you have a mild spiciness from the Creole seasoning and a creaminess from the Alfredo sauce. Add some protein and a pasta, and you have got yourself a wonderful meal!

1 teaspoon olive oil
1/2 lb shrimp, thawed, peeled and deveined
1 teaspoon olive oil
2 medium chicken breasts, cut into 1/2-inch cubes
1 tablespoon olive oil
5 green onions, chopped (tops only)
1 medium tomatoes, diced
2 teaspoons creole seasoning
1 teaspoon garlic powder
1 (1 lb) jar alfredo sauce
penne pasta

Steps:

  • Heat 1 tsp olive oil in a large skillet over Medium heat (You will need a pan big enough to add an entire jar of Alfredo sauce plus the shrimp and chicken).
  • Add shrimp and saute until pink. (You can season the shrimp with Creole seasoning for more heat if you like). When pink and firm, remove from pan and set aside.
  • Heat 1 tsp olive oil in the same large skillet over Medium/High heat.
  • Add chicken and cook until no longer pink. (You can also season chicken with Creole seasoning for heat). Remove from pan and set aside.
  • In the same pan, heat 1 Tbsp olive oil over Medium - Medium/High heat.
  • Add green onions, diced tomatoes, 2 tsp Creole seasoning and garlic powder. Cook for 5-7 minutes until a there is a good amount of liquid in the pan from tomatoes.
  • Add Alfredo sauce to tomato mixture and stir to combine.
  • Add shrimp and chicken to Alfredo/tomato mixture and stir gently to combine.
  • Reduce heat to Medium/Low. Cover and allow to simmer, stirring occasionally, until sauce reaches a warm/hot serving temperature. About 8 - 10 minutes.
  • While sauce is heating, cook Penne according to the directions on the box.
  • When sauce is hot and penne is cooked, serve sauce mixture over Penne pasta.

14 ounces peeled whole tomatoes
1 1/2 cups chicken stock
1/2 pound chicken
1/2 tablespoon canola oil
1/2 pound cooked cajun or creole sausage
1/2 medium yellow onion, diced`
1 green bell pepper, diced
2 celery ribs, diced
2 cloves garlic, minced
1/2 teaspoon tomato paste
1 teaspoon hot sauce
1/2 teaspoon dried thyme
1/2 teaspoon oregano
1 dash cayenne
1 dash garlic powder
2 bay leaves
1/2 pound shrimp, peeled and deveined
3 scallions, sliced

Steps:

  • Strain tomatoes and add juice to a 4-cup measuring cup. Place tomatoes in a medium bowl. Using your fingers, carefully tear each tomato open to release the liquid inside its seed compartments. Strain all this liquid into measuring cup. Crush tomatoes well with your hands. Add enough chicken stock to tomato juices to total 4 cups (960ml). Set aside.
  • Preheat oven to 325°F (160°C). Season chicken all over with salt and pepper. In a Dutch oven, heat oil over medium-high heat until shimmering. Add chicken and cook, turning, until browned on both sides, about 6 minutes per side. Transfer chicken to a cutting board and let rest for 5 minutes, then cut into 1/2-inch chunks and set aside.
  • Meanwhile, add sausage to Dutch oven and cook, stirring often, until just starting to darken, about 3 minutes; lower heat and/or add oil at any point to prevent burning. Add onion, bell pepper, celery, and garlic and cook, stirring and scraping bottom of Dutch oven, until browned bits have come loose and vegetables just begin to turn lightly golden, about 8 minutes.
  • Stir in tomato paste and cook, stirring, until lightly browned, about 1 minute. Add hot sauce, thyme, oregano, cayenne, garlic powder, and a very generous dose of black pepper. Add crushed tomatoes, tomato/stock mixture, diced chicken, and bay leaves and bring to a simmer. Season with salt, tasting liquid to ensure it is well seasoned.
  • Cover with lid and transfer to oven. Bake until liquid is fully absorbed and rice is tender, about 40 minutes.
  • Gently stir in shrimp and scallions and return to oven until shrimp are just cooked through, about 5 minutes. Cover pot and let rest 15 minutes. Remove bay leaves, if desired (see note).
