1 tablespoon olive oil
1 precooked chicken sausage, thinly sliced on the diagonal
1 small red onion, halved and thinly sliced
1/2 bunch asparagus, tough ends removed, cut into 1-inch lengths
1 teaspoon fresh thyme or 1/4 teaspoon dried
1 teaspoon fresh lemon juice
Coarse salt and ground pepper
1/4 cup grits or yellow cornmeal
2 tablespoons crumbled fresh goat cheese

Steps:

  • Heat oil in a skillet over medium-high. Cook sausage until browned, tossing occasionally, 1 to 2 minutes; transfer to a plate. Reduce heat to medium. Cook onion until softened, 3 to 5 minutes. Add asparagus, thyme, and 1/3 cup water. Cover, and steam until asparagus is just tender and water has evaporated, about 6 minutes. Add sausage and lemon juice; toss. Season with salt and pepper. 4 chicken sausage
2 tablespoons olive oil
1 medium onion, cut vertically into thin slices
2 coloured bell peppers, cut into 1/2-inch strips
4 garlic cloves, chopped
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
fresh ground black pepper

  • Cook the pasta according to package directions until cooked but still firm to the bite (al dente). two 2-inch pickled jalapeño chilies, minced, including the seeds (wear rubber gloves)
4 scallions, chopped fine
3/4 pound bulk fresh sausage
1 tablespoon vegetable oil
1 onion, chopped fine
1 large green bell pepper, chopped fine

2 teaspoons Worcestershire sauce

  • In a large heavy saucepan bring the water to a boil, stir in the grits slowly, and simmer them, covered, stirring occasionally, for 7 minutes. 2 1/2 tablespoons flour, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb boneless skinless chicken breast, cut bite-size
2 teaspoons oil
1 cup chicken broth
1 1/2 teaspoons minced garlic
8 ounces fresh asparagus, ends trimmed, spears cut bite-size
1 cup grape tomatoes, halved
2 tablespoons chopped scallions
2 tablespoons chopped dill

Steps:

  • Mix 2 Tbsp flour and the salt and pepper in a ziptop bag.
  • Add chicken; shake to coat.
  • Heat oil in a large nonstick skillet.
