Yield Makes 10 hors d'oeuvre servings

Number Of Ingredients 12

1 1/2 lb skinless boneless chicken thighs, trimmed and cut into 1/2-inch-wide strips
3/4 cup finely chopped shallots (about 3)
3 garlic cloves, finely chopped
1 tablespoon packed palm or dark brown sugar
1/4 teaspoon black pepper
2 tablespoons peanut or vegetable oil
2 tablespoons Asian fish sauce
1 tablespoon Chinese rice wine or sake
1/4 teaspoon salt
Accompaniment: red-curry peanut dipping sauce .
Special Equipment
about 30 (6-inch) wooden skewers, soaked in water 1 hour

Steps:

  • Combine chicken with shallots, garlic, palm sugar, pepper, oil, fish sauce, rice wine, and salt in a sealable plastic bag and turn to coat chicken, then squeeze bag to eliminate as much air as possible and seal. Marinate chicken, chilled, at least 12 hours but no longer than 24.
  • Thread each chicken strip lengthwise onto a skewer, keeping strip as straight as possible. Discard any remaining marinade.
  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Grill skewers, turning over once, until chicken is cooked through, about 4 minutes total.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and ensure that your dish turns out perfectly.
  • Choose the Right Chicken: For this recipe, it's best to use boneless, skinless chicken breasts or thighs. These cuts are lean and cook quickly, making them ideal for a stir-fry.
  • Cut the Chicken Properly: To ensure even cooking, cut the chicken into uniform pieces. Aim for bite-sized pieces, about 1-2 inches in size.
  • Marinate the Chicken: Marinating the chicken in a flavorful mixture of soy sauce, oyster sauce, and Chinese rice wine helps tenderize the meat and infuse it with delicious flavors.
  • Use a Wok or Large Skillet: A wok or large skillet is ideal for stir-frying as it allows you to cook the chicken and vegetables quickly and evenly.
  • Stir-Fry in Batches: If you're cooking a large amount of chicken, stir-fry it in batches to prevent overcrowding the pan. This will help ensure that the chicken cooks evenly and doesn't steam.
  • Add Vegetables Last: Add the vegetables towards the end of the cooking process so that they retain their crisp texture and vibrant colors.
  • Use Fresh Ingredients: Fresh ingredients, especially vegetables, will give your chicken satay a brighter flavor and more vibrant appearance.
  • Serve Immediately: Chicken satay is best served immediately after cooking, while it's still hot and crispy. Garnish with chopped peanuts, cilantro, and lime wedges for an extra layer of flavor and texture.

Conclusion:

In conclusion, chicken satay is a flavorful and versatile dish that can be enjoyed as an appetizer, main course, or even as a snack. With its tender chicken, crisp vegetables, and savory peanut sauce, it's a crowd-pleaser that's perfect for any occasion. So next time you're looking for a quick and easy meal that's packed with flavor, give this chicken satay recipe a try. Your taste buds will thank you!
