Time 2h30m

Number Of Ingredients 18

1 pound boneless, skinless chicken breasts (cut into 1-inch strips)
2 tablespoons low-sodium soy sauce (or tamari for gluten free)
1/2 tablespoon fish sauce (or additional 1/2 tablespoon soy sauce)
2 tablespoons freshly squeezed lime juice (from 2 small, juicy limes)
1 tablespoon honey
1 tablespoon Sriracha sauce
2 teaspoons ground ginger
2 cloves garlic (minced)
1 cup low sodium chicken broth
5 tablespoons creamy peanut butter
1 tablespoon honey
1 tablespoon low-sodium soy sauce (or tamari for gluten free)
2 teaspoons fish sauce (or additional 2 teaspoons soy sauce)
2 teaspoons Sriracha sauce
1 teaspoon ground ginger
2 cloves garlic (minced)
1 tablespoon freshly squeezed lime juice (from about 1 small lime)
Chopped fresh cilantro (chopped unsalted roasted peanuts, and lime wedges, for serving)

Steps:

  • In a large mixing bowl, whisk together all of the marinade ingredients, except for the chicken: soy sauce, fish sauce, lime juice, honey, Sriracha, ginger, and garlic. Add the chicken, toss to coat, then cover with plastic wrap and place in the refrigerator to marinate for 2 hours or overnight. Let stand at room temperature for 30 minutes before grilling. If using wooden skewers, soak the skewers in water for 30 minutes prior to grilling.
  • Meanwhile, prepare the peanut sauce: In a medium saucepan, combine the chicken broth, peanut butter, honey, soy sauce, fish sauce, Sriracha, ginger, and garlic. Bring to a simmer over medium heat, then let cook, stirring often, until the sauce is smooth and has thickened, about 6 minutes. Stir in the lime juice and set aside.
  • When ready to cook, preheat an outdoor grill or indoor grill pan to medium-high. Then thread the chicken onto skewers.
  • Grill chicken until cooked through, about 2-3 minutes per side. Let rest for 2-3 minutes. Sprinkle with peanuts and cilantro, then serve warm with peanut sauce and lime wedges.

SESAME CHICKEN SATE WITH PEANUT SAUCE

Provided by Robert Irvine : Food Network

Categories     appetizer

Time 40m

Yield 18 appetizers

Number Of Ingredients 11

6 boneless chicken breasts, cut into 1 1/2-inch wide strips
1/4 cup sesame seeds, white
1/4 cup black sesame seeds
2 teaspoons chili powder
2 teaspoons salt
1 teaspoon garlic powder
1/4 cup chicken broth
1/2 cup peanut butter
1/2 cup Coco Lopez
1/8 cup low-sodium soy sauce
4 teaspoon honey

Steps:

  • Preheat oven to 325 degrees F.
  • "Weave" a bamboo skewer through the length of each chicken strip (as you would run a straight pin through fabric). Mix the seeds, chili powder, salt and garlic powder in a shallow bowl. Dip chicken into warm water and roll into seed mixture. Bake on a lightly greased sheet pan until done.
  • Heat chicken broth. In a mixing bowl, combine peanut butter, Coco Lopez, soy sauce and honey and mix well. It will be thick. Slowly mix chicken broth into peanut butter mixture. It should be medium consistency for dipping skewered chicken.

Tips:

  • To make the chicken sate extra flavorful, marinate it in the coconut milk, turmeric, and lemongrass mixture for at least 30 minutes before grilling.
  • If you don't have bamboo skewers, you can use metal skewers or even wooden toothpicks.
  • Be careful not to overcook the chicken sate, as it can quickly become dry. Cook it until it is just cooked through, about 5-7 minutes per side.
  • The spicy peanut dipping sauce is the perfect complement to the chicken sate. Be sure to make extra, as it is also great for dipping vegetables or spring rolls.
  • If you are short on time, you can use store-bought peanut butter to make the dipping sauce. Just be sure to choose a natural peanut butter that doesn't have any added sugar or salt.

Conclusion:

Chicken sate is a delicious and easy-to-make dish that is perfect for a party or a weeknight dinner. The chicken is marinated in a flavorful mixture of coconut milk, turmeric, and lemongrass, then grilled and served with a spicy peanut dipping sauce. This dish is sure to be a hit with everyone who tries it!
