OUR FAVORITE CHICKEN SALAD

Our Favorite Chicken Salad image

Our favorite chicken salad has a few critical components: tender chicken, crunch, a little sweetness, and it needs to be easy to make. This recipe checks all the boxes. We have shared our basic recipe as well as a few suggestions for making it extra special. We highly recommend the toasted sesame oil - it adds a lovely umami flavor to the dressing. A little goes a long way, so only add a few dashes (not more than a 1/4 teaspoon). When we have the time, we poach chicken breasts for this salad. Here's our detailed recipe for how we poach chicken.

Time 10m

Yield Makes about 8 (1/2) cup servings

Number Of Ingredients 12

3 cups (480 grams) chopped or shredded cooked chicken, see our recipe for perfect poached chicken
1 cup (120 grams) chopped celery
4 tablespoons chopped fresh herbs like chives, parsley, and basil
1/4 cup (40 grams) lightly toasted nuts like sliced almonds, walnuts, pecans or pine nuts
1/4 cup (40 grams) dried fruit like golden raisins, cranberries, dates, or blueberries
1/2 cup (110 grams) mayonnaise, see our homemade mayo recipe
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon fine sea salt, plus more to taste
1/4 teaspoon fresh ground black pepper
2 to 4 small dashes toasted sesame oil (scant 1/4 teaspoon), optional
1 to 2 teaspoons jam, optional

Steps:

  • Combine the chicken, celery, herbs, nuts, dried fruit, and fresh fruit (if using) in a medium mixing bowl.
  • In another small bowl, stir the mayonnaise, lemon juice, mustard, salt, and the black pepper together. Taste then add the optional ingredients. Toasted sesame oil adds umami (a little goes a long way), and the jam sweetens the dressing up a bit.
  • Toss the dressing with the salad. Taste then adjust with more salt and pepper. Store, covered tightly, in the refrigerator 3 to 4 days.

Provided by Thomasina Miers

Categories     Dinner, Lunch, Main course

Time 1h5m

Number Of Ingredients 11

1 ¼kg chicken , jointed and on the bone (ask your butcher to do this for you or see Know-how)
2 tbsp olive oil
2 onions , chopped
3 garlic cloves , chopped
good pinch of saffron (about 20 strands)
125ml glass dry sherry (such as Fino or Manzanilla)
200ml chicken stock
1 tbsp thyme leaves
50g raisins
2 tbsp pine nuts
handful chopped flat-leaf parsley , to serve

Steps:

  • Heat a large frying pan on a high heat and season the chicken. Add the olive oil to the pan, then the chicken. Brown for about 5 mins on each side, remove onto a plate, then set aside.
  • Lower the heat to medium. In the remaining fat, fry the onions for 3 mins, then add the garlic and saffron. Cook for 3-4 mins more. Add the sherry, then simmer for 3-5 mins until syrupy.
  • Put the chicken leg pieces back into the pan, tip in the stock, thyme and raisins, cover, then gently cook on a low heat for 20 mins. Add the breast meat and any juices left on the plate. Simmer for 10 mins more until cooked through and the sauce in the pan has reduced.
  • While the chicken is cooking, heat oven to 200C/180C fan/gas 6. Scatter the pine nuts over a baking sheet, then roast for 10 mins until golden and toasted. Once the chicken has cooked through, season to taste, scatter with pine nuts and parsley, then serve with rice.

This recipe uses canned chicken, but if you want to use leftover chunked chicken or turkey, it 's even better. A dab of sweet relish is a nice taste surprise, and we love the apples, pecans, and raisins. The creamy salad dressing finishes it off nicely.

CURRIED CHICKEN SALAD SANDWICH WITH ALMONDS AND RAISINS

Curried Chicken Salad Sandwich with Almonds and Raisins image

Provided by Tyler Florence

Time 29m

Yield 4 servings

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts (about 1 1/2 pounds total)
Salt and freshly ground black pepper
1/2 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon curry powder
1/2 lemon, juiced
1/4 cup chopped, blanched almonds, toasted
1/4 cup raisins
A handful fresh basil leaves, torn
8 slices good-quality, dense white bread such as Tuscan

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
  • Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.
  • Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.

Tips:

  • Use high-quality mayonnaise. The mayonnaise is the binder that holds the chicken salad together, so it's important to use a good quality mayonnaise that you enjoy the taste of.
  • Shred the chicken breast by hand. Shredding the chicken breast by hand gives it a more tender and moist texture than if you were to use a food processor.
  • Toast the pine nuts. Toasting the pine nuts brings out their flavor and makes them more crunchy.
  • Use a variety of raisins. A variety of raisins, such as golden raisins, black raisins, and Thompson raisins, adds a more complex flavor to the chicken salad.
  • Season the chicken salad to taste. Season the chicken salad with salt, pepper, and any other desired seasonings to taste.

Conclusion:

This chicken salad with pine nuts and raisins is a delicious and easy-to-make dish that is perfect for a quick lunch or dinner. The combination of chicken, pine nuts, raisins, and mayonnaise creates a flavorful and satisfying salad that is sure to please everyone.
