One Pot Chicken, Vegetable & Parmesan Orzo (Risoni) image

1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, diced)
250g / 8oz chicken thigh or breast (, cut into bite size pieces)
2 1/2 cups frozen diced vegetables ((carrots, peas, corn, capsicum/peppers, anything!))
1 1/2 cups orzo / risoni ((Note 1))
1 1/2 tbsp flour
2 1/4 cups (565 ml) milk (, any fat %)
2 cups (500 ml) chicken or vegetable stock / broth ((low sodium))
3 cups baby spinach ((packed))
3/4 cup (75g) parmesan ((grated))
Salt and pepper to taste
More parmesan
Parsley or chives, if desired

Steps:

  • Heat oil in a large pan over high heat. Make sure the pan is reasonably deep - around 5cm / 2.5" or more. Otherwise, use a large pot.
  • Add garlic and onion, cook for 1 minute.
  • Add chicken, sprinkle with salt and pepper then cook for 2 minutes until cooked on the outside (raw inside).
  • Add frozen vegetables (still frozen ok) and flour, stir until flour is incorporated.
  • Add risoni/orzo, stock and milk, then stir well.
  • Bring to simmer then adjust heat so it's bubbling gently (see video). Cook for 7 minutes (no lid), stirring every now and then, until risoni is almost tender (still quite soupy at this stage).
  • Add parmesan and spinach, stir through. Add salt and pepper to taste.
  • Consistency should be like a loose risotto (it absorbs liquid and thickens quite quickly when serving), nice and creamy.
  • Serve, garnished with parsley and more parmesan if desired!

This was inspired by a local Italian Restaurant. We loved the light sauce and smoked flavor. It was great with a salad and breadsticks. I pounded out the breasts to an even thickness to ensure even cooking.

4 approx. 6 oz ea. boneless skinless chicken breasts
4 slices smoked ham (very thin slice or shaved)
1 medium tomatoes, sliced very thin,enough to cover each chicken breast
8 ounces fresh sliced mushrooms
1 lb spaghetti or 1 lb angel hair pasta, cooked according to box and tossed lightly with olive oil
1/4 cup parmesan cheese
1/4 cup mozzarella cheese
1 can low sodium chicken broth
1 -2 tablespoon olive oil, additional needed for tossing with pasta,to taste
garlic powder
black pepper

Steps:

  • Pre-heat oven to 350 Lightly season chicken with garlic powder and black pepper.
  • Heat Olive Oil in large skillet on M-High.
  • Quickly sear chicken and remove from pan.
  • (reserve) Sauté Mushrooms in skillet until about half cooked add chicken stock.
  • Spray casserole dish (9x13) with No-stick spray.
  • Place chicken in casserole dish.
  • Add a layer of tomato to each chicken breast followed by a layer of ham and a layer of mushrooms, add stock, cover with Foil and bake for 20-30 minutes or until chicken is cooked through (when poked with fork juices run clear!).
  • Add cheeses to top of each breast and return to oven uncovered.
  • Bake until cheeses are melted.
  • Serve chicken on bed of pasta with some of juice from pan.
  • Some sauted zuccinni squash on the side is really good and can also be used as an edible garnish.

1 pint (2 cups) ripe strawberries, hulled
2 1/2 tablespoons sugar syrup
1 teaspoon Grand Marnier liqueur
6 orange zest strips, for garnish
1 (750-ml) bottle Prosecco, chilled

Steps:

  • Place the strawberries in the bowl of a food processor fitted with the steel blade and puree until completely smooth. Pour the liquid through a fine-mesh sieve and press to make a seedless puree. Discard the seeds. Add the sugar syrup and Grand Marnier to the puree and refrigerate until very cold.
  • When ready to serve, rub the rim of each Champagne glass with the orange zest. Pour the cold Prosecco into Champagne glasses until they're each three-quarters full. Carefully stir 2 tablespoons of the puree into each glass and serve very cold.

4 (4 ounce) veal medallions

Pepper
2 tablespoons olive oil
4 ounces shallots
Madeira wine
12 ounces veal demi-glace, substitute 6 ounces beef stock with 6 ounces chicken stock
1 ounce truffles or truffle oil, substitute mushrooms for truffles or truffle oil
2 tablespoons cold butter
4 (1-ounce) slices foie gras or chicken liver
Fresh chopped parsley

Steps:

  • Preheat oven: 400 degrees F.
  • Season the veal with salt and pepper. Preheat olive oil in saute pan and sear veal. Finish in oven for approximately 12 minutes until medium rare.
  • Remove from oven and let veal rest on a platter for 4 minutes. Add shallots to pan and sweat. Deglaze pan with Madeira wine. Add the demi-glace, salt, and pepper. Shave fresh truffles into sauce. Swirl butter into the sauce to finish.
  • Preheat saute pan to sear foie gras. Season foie gras with salt and pepper. Sear both sides. Plate the veal, 1 piece on each of 4 plates. Pour the sauce over the veal and finish the dish with seared foie gras and slice truffles over dish.

2 filets mignons, about 5 ounces each
Salt and black pepper
1/4 cup fond de veau (veal stock) or 1 tablespoon veal demi-glace (available in fine food markets) mixed with 3 tablespoons water
1 tablespoon truffle juice
1 teaspoon chopped black truffles
2 tablespoons butter
1 tablespoon vegetable oil
2 slices French bread, trimmed to the shape of the filets mignons
2 slices fresh foie gras, about 2 ounces each
2 tablespoons Madeira
2 thin slices black truffle

Steps:

  • Season the filets mignons with salt and pepper; set aside. In a small bowl, combine the veal stock or demi-glace, truffle juice and chopped truffles; set aside.
  • In a large skillet over medium heat, melt a third of the butter with the oil and quickly fry the slices of bread until lightly browned on both sides; remove and set aside. Add another third of the butter to the skillet, and sauté the filets mignons over high heat for 4 minutes a side for rare or 5 minutes a side for medium-rare. Remove the filets from the skillet, set aside and keep warm.
  • Using the same skillet and high heat, sauté the foie gras slices 90 seconds on each side and put 1 slice on each of the filets.
  • Discard all fat from the skillet. While the skillet is still hot, add the Madeira, scraping the bottom of the pan. Add the veal stock mixture, bring to a quick boil, then remove from heat and stir in the remaining butter to make a silky sauce. Season with salt and pepper to taste.
  • On each of two plates, place the croutons in the center and top with the filet mignon and foie gras. Garnish with a slice of truffle on the top. Spoon the sauce over and around. Serve hot.

2 tablespoons extra-virgin olive oil
1/2 pound beef stew meat, cut into 2-inch cubes
Kosher salt and freshly ground pepper
1/2 teaspoon crushed black peppercorns
2 shallots, peeled and thinly sliced
1/4 cup dry red wine
1 cup homemade or low-sodium canned beef broth
1/2 cup truffle juice
1 small bunch flat-leaf parsley, stems and leaves separated and reserved

Steps:

  • In a large nonstick skillet, heat the oil over high. Season beef with salt and pepper. Working in batches if necessary so as not to crowd the pan, brown the beef, about 3 minutes per side.
  • Reduce heat to medium, then add peppercorns and shallots. Cook, stirring, 10 minutes. Add wine and cook, stirring up any browned bits on the bottom of the pan with a wooden spoon, until the liquid has almost evaporated. Add stock, truffle juice, and parsley stems.
