Provided by Mary Cadogan

Categories     Dinner

Time 1h

Number Of Ingredients 5

8 chicken thighs , skin on
1 tbsp seasoned flour
1 head garlic
3 large stalks rosemary
300ml dry white wine

Steps:

  • Prepare the chicken: Wipe the chicken with kitchen paper, trim away any excess skin with scissors then toss the thighs in the seasoned flour. Separate the bulb of garlic into cloves (no need to peel).
  • Fry the chicken: Heat 2 tbsp of olive oil in a large pan until searingly hot, add the chicken, skin side down, and fry without moving the chicken until the skin is crisp and browned. Turn the chicken over and brown it on all sides (you may need to do this in batches). Add the garlic and rosemary, then pour in the wine and season with salt and pepper. Bring to the boil, then reduce the heat and simmer, covered, for 40-45 minutes, until the chicken is tender and the sauce thickened. Serve with rice or parsley-tossed tagliatelle, and buttered spinach.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and utensils ready. This will help you stay organized and avoid scrambling.
  • Choose the right chicken: For this recipe, it's best to use a whole chicken that is about 3 pounds. You can also use chicken breasts or thighs, but the cooking time may vary.
  • Season the chicken well: The key to a flavorful chicken is to season it well. Use a generous amount of salt, pepper, and garlic powder.
  • Brown the chicken: Before you bake the chicken, brown it in a large skillet over medium heat. This will help to seal in the flavor and give the chicken a nice golden color.
  • Use a flavorful sauce: The sauce is what really makes this dish special. Use a combination of chicken broth, white wine, lemon juice, and herbs.
  • Roast the chicken: Once the chicken is browned, transfer it to a roasting pan and bake it in a preheated oven until it is cooked through.
  • Let the chicken rest: After the chicken is cooked, let it rest for 10 minutes before carving. This will help the juices to redistribute and make the chicken more tender.
