9 large red bell peppers
2-3 tbsp olive oil
1 1/2 lb. ground chicken thighs
2 medium onions
3 medium carrots
1 garlic clove
2 cups white rice
2 1/2 cups chicken broth
1 tbsp salt
1 tsp black pepper
2 tbsp fresh dill (chopped)
1 14 oz can crushed tomatoes
1/2 cup water

Steps:

  • Wash and remove the core and seeds of each bell pepper. Rub a little salt on the inside of each pepper. Then set aside.
  • Heat olive oil in a skillet and cook the ground chicken thighs until almost completely cooked. About 80 % done.
  • Chop the onion, grate the garlic, and shred the carrot. Add it to the ground chicken. Cook until the onion becomes translucent.
  • Add the rice, salt, and chicken broth. Cook over medium heat until the rice is almost fully cooked.
  • Stir in the black pepper and chopped fresh dill. Cook for another 2-3 minutes.
  • Generously stuff each pepper with the rice and meat filling. Place the stuffed peppers in a 9x13 deep baking dish.

10 ounces frozen spinach, thawed and squeezed dry
One 12-ounce jar roasted red peppers, drained, patted dry and chopped
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 small chicken breasts (about 8 ounces each)
2 tablespoon olive oil
1 shallot, grated or chopped
1/4 cup dry white wine
1 cup chicken broth
1 tablespoon unsalted butter, cold
Chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Mix together the spinach, peppers, breadcrumbs, Parmesan, smoked paprika, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Set aside.
  • Butterfly the chicken: Holding your knife parallel to the cutting board, slice a breast through the middle, stopping about 1/2-inch short of the other side. Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the center of the filling registers 160 degrees F, another 6 to 8 minutes.
  • Transfer the roll-ups to a cutting board and cover loosely with foil. Return the skillet to the stovetop over medium heat (be careful, the handle will be very hot). Add the shallots and cook until softened, stirring, about 1 minute. Add the wine and boil until reduced by half, 1 to 2 minutes. Add the chicken broth; boil until reduced by half, about 3 minutes. Off the heat, whisk in the butter and season with salt and pepper.

1 tablespoon sesame oil
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1/2 cup finely chopped carrot
1/4 cup thinly sliced green onion
1 cup finely chopped chicken, skin removed before cooking
1 cup cooked rice
1/2 cup frozen English peas, thawed
1 egg, beaten
4 1/2 teaspoons soy sauce
1/8 teaspoon salt

Steps:

  • Cut a 1/2" thick slice from the side of each pepper, reserving slices; remove seeds.
  • Place peppers in boiling water, boil 5 minutes, drain, set aside.

1 cup water
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups thinly sliced bell peppers, any and all colors
1 1/2 teaspoons olive oil, divided
1/4 teaspoon oregano
1/4 teaspoon thyme
1/8 teaspoon pepper
1 tablespoon grated romano cheese or 1 tablespoon parmesan cheese
1 tablespoon breadcrumbs

Steps:

  • Preheat oven to 350.
  • Pound chicken breasts to about 1/4" thickness and store in fridge until needed.
