2 pounds ditalini pasta
2 tablespoons olive oil, divided
Salt and freshly ground black pepper
4 boneless, skinless chicken breast halves, pounded to 1/4-inch thickness
8 ounces thinly sliced ham
1 cup baby spinach leaves, chopped
4 ounces goat cheese
2 tablespoons Dijon mustard
1 cup seasoned bread crumbs

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Cook ditalini according to package directions. Drain and toss with 1 tablespoon of the olive oil. Season with salt and black pepper.

½ cup shredded Parmesan cheese
1 clove garlic, finely chopped
4 teaspoons butter
4 ounces thinly sliced prosciutto

⅓ cup white wine

1 pinch black pepper

  • Preheat oven to 325 degrees F (165 degrees C).

12 ounces fettuccine
Olive oil, for tossing
12 ounces boneless, skinless chicken breast (about 2)
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta and cook according to package directions until al dente (tender but still slightly firm). Drain and toss with a splash of oil.
  • Meanwhile, slice the chicken into 1/4-inch-thick strips, and lay them on a plate or a sheet of waxed paper. Season with salt and pepper.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high and add the chicken in 1 layer. 4 chicken breasts
1 (12 ounce) package bacon
8 cheese slices (Provolone, swiss, american, whatever you fancy...)
1 egg
1/4 cup milk
1 cup saltine crackers, crushed or 1 cup breadcrumbs
1 teaspoon rosemary
3 tablespoons oil
1 lb pasta (I used Rotelle style)
1 cup frozen peas, thawed
1 (8 ounce) jar alfredo sauce

Steps:

  • Slice chicken breasts crosswise into 1/4" slabs (lay breast flat on cutting board, with knife parallel to board, slice across but stop short by 1/4". Repeat starting at opposite side to make one long slab of 1/4" thick chicken.).
  • Flatten out chicken, lay out bacon slices to cover chicken, then cover with cheese slices.
  • Roll Chicken/bacon/cheese up and slice into 1/2" rounds and secure with toothpicks.
  • In separate bowls, combine egg & milk; crackers & seasoning.
