Number Of Ingredients 16

1 tablespoon olive oil
8 ounces mushrooms (sliced and divided)
1 small onion (diced )
1 pound chicken breasts (or thighs, diced)
½ teaspoon poultry seasoning
¼ teaspoon thyme leaves
salt and pepper to taste
3 cloves garlic (minced)
¼ cup white wine (optional)
2 ½ cups chicken broth (not low sodium)
1 cup basmati rice (uncooked )
1 bay leaf
1 cup peas
2 tablespoons butter
2 tablespoons parmesan cheese (for garnish, optional)
2/3 cup light cream

Steps:

  • Cook mushrooms over medium heat with olive oil until tender, about 6 minutes. Remove from pan and set aside.
  • Cook onions (use same pan as mushrooms) until softened, about 5 minutes. Season the chicken with poultry seasoning, thyme, and salt and pepper. Add chicken and garlic, cook 2-3 minutes or until chicken is lightly browned on the outside.
  • Add wine and cook 3-5 minutes or until wine is reduced to half.
  • Stir in the mushrooms, broth, rice, and bay leaf. Cover and simmer 18-20 or until rice is tender.
  • Remove from heat and discard bay leaf. Stir in peas, butter and cream. Cover and let rest 5 minutes.
  • Top with Parmesan cheese if using.

1 Tbsp veg. oil
2 boneless, skinless, chicken breast halves
1 can(s) campbells, ..condenced cream of chicken soup
1-1/2 c water
1/2 tsp onion powder
1/4 tsp black pepper
1 c uncooked, regular grain rice
2 c your choice, frozen vegetables
3/4 c shredded, cheddar cheese

Steps:

  • 1. Heat oil in a 12 inch skillet, over medium high heat. Add chicken, and cook 10 minutes or until well browned on both sides. Remove chicken from skillet.
  • 2. Stir soup, water, onion powder, black pepper, and rice in skillet and heat to a boil. Reduce heat to low. Cover and cook 15 minutes. Stirring once half way thru cooking time.

This is a small but tasty and easy recipe that uses leftover chicken. I like the fact that it does not have any canned creamed soup in it. I usually serve it in a bowl along with Red Lobster Cheddar Bay Biscuits Copycat. Enjoy:)

1/2 cup thinly sliced celery
1/4 cup chopped onion
3 tablespoons butter
2 cups chicken broth, possibly more
2 medium carrots, halved and thinly sliced
2/3 cup uncooked long grain rice
1/8 teaspoon salt
1/4 teaspoon pepper
2 cups cubed cooked chicken
1 tablespoon minced fresh parsley

Steps:

  • In a small saucepan, saute celery and onion in butter.
  • Add broth, carrots, rice, salt, and pepper.
  • Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Check to see if more broth is needed after 20 minutes.
  • Stir in chicken and parsley.
  • Cover and simmer 5 to 10 minutes longer or until the rice and vegetables are tender.
