1 young chicken, cut into pieces
2-3 cloves of garlic, peeled and slightly crushed
1 sprig of fresh rosemary, leaves only
2-3 Tbs passata (tomato purée)
White wine
Olive oil
Salt and pepper

Steps:

  • Cut the chicken up into serving pieces of roughly equal size. Dry all the pieces thoroughly with paper towels and set aside.
  • In a braiser or sauté pan large enough to hold all the chicken pieces in one layer, sauté the garlic cloves in abundant olive oil over moderate heat for just a minute or two, until you can smell the aroma and the garlic is starting to brown lightly. Remove the garlic and add the chicken pieces. Brown them lightly but thoroughly on all sides, seasoning with salt and pepper as you go.
  • Pour on a splash of white wine and tomatoes purée and cover the pan, leaving the lid slightly ajar. There are several variations of it floating around on the internet and I think it should be originally credited to "MM-Recipes Digest by Paula on Sep 16, 1998." I did not see it listed on this site and wanted to share it with everyone.

2 chicken breasts
2 tablespoons olive oil
1/4 cup red wine vinegar
6 garlic cloves, peeled
salt and pepper
1 tablespoon rosemary

Steps:

  • Cut up the chicken breasts into bite sized pieces.
  • Heat pan to medium heat and add olive oil.
  • Fry chicken until golden brown.
  • Reduce heat to low and add garlic cloves, rosemary, salt and pepper, and red wine vinegar.
  • Cook on low for 15-20 minutes.

1 whole chicken (about 4 pounds), cut into 8 pieces
2 celery stalks, cut into 4-inch pieces
2 medium carrots, peeled and cut into 4-inch pieces
1 medium onion, quartered
6 sprigs fresh flat-leaf parsley
1/4 teaspoon whole black peppercorns
2 cans (14 ounces each) low-sodium store-bought chicken broth
1 teaspoon coarse salt

Steps:

  • Place chicken in a large stockpot. Add remaining ingredients and enough water to cover chicken. Bring to a boil over high heat. Skim off any foam; discard. Reduce heat to low; simmer until chicken has just cooked through, about 25 minutes.
  • Transfer chicken to a plate, and let cool slightly. Pour stock through a fine sieve into a bowl; discard solids. Set aside 1 1/2 cups stock for potpie; reserve remaining stock for another use. Remove skin from chicken; discard. Remove meat from bones, and tear into bite-size pieces. (You should have about 4 cups.)

1 spatchcocked chicken
Coarse salt and ground pepper
4 thin lemon slices
4 sprigs thyme
1/2 pound new potatoes, quartered
1 yellow onion, cut into 8 wedges
2 teaspoons olive oil

Steps:

  • Preheat oven to 500 degrees. Season chicken with salt and ground pepper. Using your fingers, loosen skin from breast meat; tuck lemon slices and 2 springs thyme between skin and meat. Place chicken, breast side up, in a pan. In a bowl, toss potatoes, onion wedges, and 2 sprigs thyme with olive oil; season with salt and pepper. Add to pan.
  • Roast chicken until juices run clear when pierced between breast and leg (an instant-read thermometer should read 165 degrees when inserted in thickest part of a thigh, avoiding bone), about 30 minutes. Let rest 5 minutes before carving.

2 sweet potatoes, sliced very thinly
2 Yukon Gold potatoes, sliced
1 large onion, sliced
1 (2 to 3 pound) roasting chicken
2 tablespoons olive oil, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease the top and bottom of a broiler pan with cooking spray.
  • Layer sweet potatoes, potatoes, and onion slices in the bottom of the broiler pan.
