- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken breasts between 2 sheets of heavy plastic or waxed paper on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/2-inch thickness.
- Combine bread crumbs, 1 teaspoon oregano, 1/2 teaspoon garlic salt, salt, and black pepper in a shallow bowl. Dip both sides of chicken in bread crumb mixture until evenly coated.

- Use the refrigerated pre-mixed dough for No-Knead Flatbreads Recipe #387518.
- Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
- Preheat oven to 400 degrees F.
- Remove the Olive Oil Flatbread dough (Recipe #387518) from the refrigerator. Lighly dust the surface with flour and cut off a 1 pound (grapefruit size) piece.
- With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
- On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
- Spread the sauce on the dough, then cheese and top with meat, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
- Starting with the long end roll the dough into a log.
- NOTE: Cut only the number of pieces you want to bake. The rest can be wrapped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
- Using kitchen shears, cut the dough into 1/2 inch pieces.
- Place them on the prepared sheet, leaving plenty of space for them to expand when they bake.
- Bake for 15-18 minutes, or until golden brown and the cheese has melted and caramelized a bit.

- * I used quartered low-fat pepperoni slices without sacrificing the taste. While I needed to use olive oil to make up for the missing rendered fat, I did save considerably on cholesterol.
- Cook pasta according to package directions.
- Dice pepperoni into 1/4" cubes.
- Cook in frying pan over medium heat, allowing the fat from it to render out. Remove from pan and set aside. Season flour with salt, pepper, oregano, basil, garlic powder and onion powder.
- Cut chicken in to bite-sized chunks.
- Dredge chicken pieces in seasoned flour until coated.
- Shake off excess flour and brown in the rendered pepperoni fat (and olive oil, if needed) until the chicken is almost cooked.
- Remove from pan and set aside. Whisk tomato sauce, tomato paste, crushed red pepper flakes and 1/2 cup water together in pan until smooth.
- Return chicken and pepperoni to pan.
- Bring to simmer and cook, stirring, for 5 to 7 minutes.
- Serve over a bed of pasta.
PEPPERONI & MOZZARELLA STUFFED CHICKEN BREASTS
Steps:
- 1. STEP 1: Trim the chicken breasts. Slice each breast in half diagonally to create two diamond-like shaped pieces. Using a small, sharp knife, cut a pocket into the side of each breast piece. This can be slightly tricky on thinner pieces so be careful. Be sure not to cut all the way through the meat but rather just into one side so that the fillings will stay in. STEP 2: Stuff each piece of chicken with 1/2 oz. of cheese and about 4 slices of pepperoni. Lightly season each piece with salt and pepper. Set the stuffed chicken aside. STEP 3: Preheat your oven to 350 degrees and line a baking sheet with aluminum foil. Begin to heat a large skillet with 6 Tbsp of vegetable oil over medium/high heat. Collect three shallow dishes and put the flour in one, the egg in another and the bread crumbs in the third (Pampered Chef Coating Trays would be great for this). Beat the egg until it is an even consistency (adding a 1/2 tsp of water helps break it up). STEP 4: One by one, coat each piece of chicken in the flour, then the egg then the bread crumbs. Use your hands so that you can keep the open side of the pocket pinched closed and keep the fillings in. The flour helps the egg adhere and the egg keeps the bread crumbs in place. This is a basic bread coating. STEP 5: Test the oil in the skillet to see if it is hot enough by dropping a small pinch of bread crumbs in. The bread crumbs should sizzle and dance A LOT. It is very important that the oil is hot enough or else the breading will soak up a lot of oil and you'll end up with some really greasy chicken!. Place all four pieces of chicken in the skillet and cook until it is golden brown and crispy on each side. This should take no more than 2-3 minutes. STEP 6: When you remove the chicken pieces from the skillet, transfer them to the baking sheet and place it in the oven.
- 2. Finish baking the chicken (to cook the inside) for about 25 minutes (longer if you have larger pieces). Remove from the oven (check to make surre the chicken is cooked through) and serve immediately! -

- 1. Preheat oven to 350 degrees F. Line a baking sheet with foil and lightly spray with non-stick cooking spray.
- 2. While the oven is preheating, place the chicken breasts on a large cutting board. If the chicken appears to be a little thicker than thin, pound it down using a meat mallet to about 1/4 - 1/2-inch thick. Season with salt, pepper, and garlic powder or garlic salt, to your taste. Add Italian seasoning, to your taste.
- 3. Place a small amount of the cheese over the chicken breasts.
- 4. Place about 3 slices of pepperoni over the cheese.
- 5. Carefully roll the chicken, from smallest end to largest end as tightly as you can, and secure with toothpicks with the "seam side" facing down. Add more seasonings to your liking.
- 6. Place about 2 to 4 tablespoons of marinara sauce on the cooking sheet and carefully transfer the chicken to the baking sheet. You can add an extra pepperoni on top of each chicken breast simply by placing it over the toothpicks and down onto the chicken.
- 7. Bake for about 30-35 minutes or until chicken is done. Add marinara sauce over the chicken and sprinkle with additional cheese. Place back in the oven for about 5 minutes, or until cheese has melted.
- 8. Remove the chicken and transfer to plates. Carefully remove the toothpicks and serve. You can either cut it into small spiral rolls or eat it just like it is.

This is quite spicy and takes a bit of a fuss to make, but it is way more than worth it. - Prepare pasta by instructions on box using salted water; rinse, drain and set aside.
- Over a medium heat, in a large skillet, saute celery, bell pepper, onion and mushroom in 1 tablespoon of the olive oil until onion is clear.

- Preheat the oven to 375 degrees fahrenheit. Spray a large baking dish with nonstick spray and set aside. To each flattened chicken breast, season 1 side (the topside) with salt, pepper, onion powder and a good pinch of dried oregano, scattering it evenly over each breast. Next add a layer of shredded Parmesan, just a light but solid layer (you don't want too much or it will be hard to roll them.) Finally add a layer of pepperoni, just overlapping them slightly. Again don't go doubling up the pepperoni or it will be too hard to roll. Starting at the wide end, carefully roll up the chicken trying to keep all of the filling in.
