CHICKEN PASTE OR CHICKEN TEA SANDWICH FILLING

Chicken Paste or Chicken Tea Sandwich Filling image

This is a receipt my late Mother used to make for tea sandwiches or her famous Sandwich Loaf, which honestly I could never dare attempt, as her's were 'Perfect'! As far as I can make out this sort of filling has gone out of fashion, but is as close to the Victorian style tea sandwiches as one might find since WW2. I hope you enjoy this!

Time 1h45m

Yield 12 small sandwiches, 6 serving(s)

Number Of Ingredients 9

6 large boneless skinless chicken breasts
mayonnaise (I use Hellman's)
1 teaspoon Dijon mustard
1 small white onion (optional)
1 stalk celery (optional)
fresh ground pepper
celery salt
celery seed
2 tablespoons melted butter

Steps:

  • In a large pot of water, place the chicken breasts. Add bay leaf, pepper corns and salt and even a stalk of celery and a carrot if handy. Bring to a boil and simer for about 45 minutes until chicken is cooked but not rubber. Drain, rinse and cool.
  • If you are fortunate enough to have a splendid Kitchen Aid, use the meat grinder attachment. An old fashoind meat grinder works just as well and adds 'character' to your work. LOL Break the cooled chicken into pieces and run through the meat grinder. Put the onion and celery through as well (optional). Mix evenly. It should be very crumbley. Add enough mayonaise to bind and mix well, you want the paste to be moist but not wet. Add the rest of the ingredients to taste. Chill and enjoy on your choice of bread. Add a little more mayonaise and perhaps some cripsy bacon if you want to use it as spread for crackers. Enjoy!

CHICKEN-LIVER PâTé

Chicken-Liver Pâté image

You could serve this chicken pâté as an appetizer at a dinner party, or simply as a light (really!) supper or a sandwich spread. It takes less than a half-hour to prepare, and it will firm up in the refrigerator in a few hours. Simply pack the mixture into a bowl or glass jar, cover and refrigerate.

Time 20m

Yield 6 to 8 servings

Number Of Ingredients 7

8 tablespoons unsalted butter, cut into cubes
2 medium shallots, peeled and finely chopped
1 pint fresh chicken livers, approximately 1 pound, trimmed
1 tablespoon fresh thyme leaves, chopped
1/3 cup Madeira or port
3 tablespoons heavy cream, plus more as needed
Kosher salt to taste

Steps:

  • Put a large, heavy sauté pan over medium heat, and melt 4 tablespoons of the butter until it begins to foam. Add the shallots, and sauté them until translucent, being careful not to allow them to brown. Add the livers, thyme and Madeira or port, and bring the heat to high. Cook, occasionally stirring the livers around in the pan with a spoon, until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.
  • Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter. Purée until smooth, adding a little more cream if necessary. Taste and adjust seasoning, adding salt if necessary.
  • Pack the pâté into a glass jar or bowl, then smooth the top with a spatula. Cover with plastic wrap and refrigerate until firm, about two hours or up to five days. Serve with bacon-onion jam and copious amounts of toast.

Tips:

  • If you don't have any fresh herbs, you can use dried herbs instead. Use about 1/4 of the amount of dried herbs that you would use fresh herbs.
  • You can use any type of bread for these sandwiches, but a soft, white bread is best. You can also use croissants or biscuits.
  • If you are making the sandwiches ahead of time, wrap them tightly in plastic wrap and store them in the refrigerator for up to 3 days.

Conclusion:

Chicken pâté tea sandwiches are a delicious and easy-to-make appetizer or lunch. They are perfect for parties or picnics. The creamy chicken pâté is flavorful and pairs perfectly with the soft bread. These sandwiches are sure to be a hit with everyone who tries them.
