Time 1h45m

Yield 4 servings

Number Of Ingredients 20

3 tablespoons olive oil
1 teaspoon chopped fresh rosemary leaves
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh Italian parsley leaves
Salt and freshly ground black pepper
Eight 3-ounce chicken cutlets
1 1/2 cups Simple Tomato Sauce, recipe follows, or purchased marinara sauce
1/2 cup shredded mozzarella
16 teaspoons grated Parmesan
2 tablespoons unsalted butter, cut into pieces
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
Two 32-ounce cans crushed tomatoes
4 to 6 fresh basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Preheat the oven to 500 degrees F.
  • Stir the oil and herbs in a small bowl to blend. Season with salt and pepper. Brush both sides of the cutlets with the herb oil. Heat a large heavy oven-proof skillet over high heat. Add the cutlets and cook just until brown, about 2 minutes per side. Remove the skillet from the heat.
  • Spoon the marinara sauce over and around the cutlets. Sprinkle 1 teaspoon of the mozzarella over each cutlet, then sprinkle 2 teaspoons of the Parmesan over each. Sprinkle the butter pieces atop the cutlets. Bake until the cheese melts and the chicken is cooked through, about 3 to 5 minutes.;
  • In a large casserole pot, heat the oil over medium high heat. Add the onion and garlic and saute until soft and translucent, about 2 minutes. Add the celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add the tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove the bay leaves and check for seasoning. If the sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors. Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with the remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

SKILLET PARMESAN CHICKEN

Skillet Parmesan Chicken image

This is real comfort food. A family favorite. If you can, buy the fresh mozzarella. You won't believe the difference and it's worth it. The texture isn't rubbery like the typical mozzarella. I got it from watching an Emeril show on the Food Network.

PARMESAN CHICKEN CASSEROLE

Came up with this easy recipe when looking for something just a little bit different. Smells divine while cooking, tasty and comes together quickly. Although I used macaroni noodles, any kind of pasta you like can be used. Enjoy! *Tip - To easily cut up boneless chicken, partially freeze it first and use a sharp smooth (non-serrated) knife.*

Categories     Chicken Breast

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 (16 ounce) package macaroni noodles
1 cup dry breadcrumbs
2 teaspoons italian seasoning
1/3 cup dry parmesan cheese
1 lb boneless skinless chicken breast, cut into bite size pieces
1 teaspoon olive oil
1 teaspoon butter
3 cups marinara sauce, divided
1 cup pre-shredded mozzarella cheese, divided

Steps:

  • Cook pasta, drain.
  • Preheat oven to 350 degrees.
  • Heat butter and olive oil together gently over medium heat.
  • While noodles are cooking, mix bread crumbs, Italian seasoning, and Parmesan cheese in a large ziplock bag or bowl with tight-fitting lid.
  • Place diced chicken in the bag or bowl and shake vigorously, coating chicken with bread mixture.
  • Cook chicken in butter/oil mixture until cooked through, and browned on all sides. (about 10 minutes).
  • Layer baking dish with noodles, 1/2 sauce, 1/2 shredded cheese, chicken, remaining sauce, remaining cheese.
  • Bake 30 minutes or until heated through and cheese is melted.

Tips:

  • Use a large skillet. This will ensure that the chicken and pasta have enough room to cook evenly.
  • Don't overcrowd the skillet. If you do, the chicken and pasta will not cook evenly.
  • Cook the chicken until it is cooked through. This will help to prevent the chicken from becoming dry.
  • Use a good quality marinara sauce. This will make a big difference in the flavor of the dish.
  • Add plenty of cheese. This will help to make the dish rich and creamy.
  • Serve the dish immediately. This will help to keep the chicken and pasta warm and prevent the cheese from becoming rubbery.

Conclusion:

Chicken parmesan skillet casserole is a quick and easy weeknight meal that is sure to please the whole family. It is made with simple ingredients that you probably already have on hand, and it can be on the table in under an hour. This dish is also a great way to use up leftover chicken.
