- Cut each chicken breast in half to make them around 1/4-inch thick.
- Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
- Roll up and secure closed with toothpicks; set aside.
- In a small mixing bowl, whisk eggs; set aside.

- 1. Preheat your oven to 375.
- 2. Meanwhile, mix chream cheese, spinach, 1 cup mozzarella and 3 tablespoons of parmesan unti well blended and set aside.
- 3. Place the chicken breast one at a time between two sheets of plastic wrap and pound down to 1/4 inch thickness.
- 4. When finished with all six chicken breast lay them flat and spread mixture onto each breast.
- 5. Start at one short end of each breast and roll up chicken tightly and secure with a wooden toothpick if desired and set aside.
- 6. In a shallow dish, beat eggs.
- 7. Mix remaining parmesan and cracker crumbs in separate shallow dish.
- 8. Dip chicken bundles in egg and then roll in crumb mixture.
- 9. Place seam-sides down in a 13 X 9 inch baking dish that has been sprayed with cooking spray.
- 10. Place in oven and bake for 30 minutes or until chicken is done.
- 11. Remove from oven and discard toothpicks if you used them.
