1 medium spaghetti squash
4 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons minced fresh parsley, plus more for topping
1 tablespoon minced fresh oregano or 3/4 teaspoon dried oregano
1 tablespoon minced fresh basil or 3/4 teaspoon dried basil
2 tablespoons olive oil
1 jar (14 ounces) pasta sauce
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Steps:

  • Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down; microwave on high until tender, about 15 minutes. 1 medium spaghetti squash (4 pounds)
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons prepared pesto
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 cup dry bread crumbs
1/4 cup shredded Parmesan cheese
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 tablespoon plus 1 teaspoon olive oil, divided
1/2 pound sliced fresh mushrooms
1 medium onion, chopped
1 garlic clove, minced
1/2 cup chicken broth
1/3 cup shredded cheddar cheese

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high for 14-16 minutes or until tender., Meanwhile, in a blender, combine the tomatoes, pesto, garlic powder and Italian seasoning. 1 (3 pound) spaghetti squash, halved lengthwise and seeded
extra-virgin olive oil cooking spray
2 large egg whites
½ cup blanched almond flour
2 tablespoons shredded Parmesan cheese
sea salt and ground black pepper to taste
5 (5 ounce) skinless, boneless chicken breasts, pounded flat
1 tablespoon extra-virgin olive oil
1 (28 ounce) can fire-roasted diced tomatoes
2 tablespoons minced garlic
1 tablespoon minced fresh parsley
1 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Spray spaghetti squash flesh with cooking spray, then place cut-sides down on the prepared baking sheet. Cover with foil.
