1 cup long-grain basmati rice
2 1/2 cups low-sodium chicken broth
1 pound chicken tenders, cut crosswise into 1-inch pieces
3/8 teaspoon smoked Spanish paprika
Salt and freshly ground pepper
3 tablespoons olive oil
1 cup chopped yellow onion
8 ounces chorizo, andouille, linguica, or kielbasa, cut into 1/4-inch-thick rounds
1 red bell pepper, diced
3 cloves garlic, minced or pressed
1/4 teaspoon saffron, crushed
1/2 teaspoon dried oregano
1 14.5-ounce can diced tomatoes
3/4 cup frozen peas
1 tablespoon chopped fresh parsley, plus more for garnish

Steps:

  • Combine the rice with 1 1/4 cups of the chicken broth in a microwave-safe container. Cover and microwave for 10 minutes.
  • Meanwhile, sprinkle the chicken tenders with the paprika and some salt and pepper. Heat 2 tablespoons of the olive oil in a large heavy pan or Dutch oven over medium-high heat until starting to shimmer. Add the chicken and cook for 2 minutes per side, until lightly browned. Transfer to a plate and set aside.
  • Add the remaining 1 tablespoon olive oil to the pan. Add the onion and sausage and cook for 5 minutes, stirring often. Add the bell pepper, garlic, saffron, oregano, and 1/4 teaspoon of salt and cook, stirring, for 2 minutes more.
  • Add the remaining 1 cup chicken broth, bring to a boil, and deglaze the pan by scraping up any browned bits along the bottom, 1 minute or so.
  • Stir in the tomatoes, partly cooked rice, and chicken, bring to a simmer, reduce the heat to medium, and cook, loosely covered, for 8 minutes more or until the liquid is absorbed.
  • Add the peas and heat through for 2 minutes. Add salt and pepper to taste, toss with the parsley, and serve hot, sprinkled with a little more parsley.

1/4 cup olive oil
1 tablespoon dark chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
4 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 cup diced yellow onion
1/2 cup diced red bell pepper
1/4 cup diced celery
2 sprigs fresh marjoram
1 sprig fresh thyme
Kosher salt and freshly ground black pepper
2 tablespoons minced garlic
3/4 cup tomato puree
2 cups long-grain rice
4 cups chicken stock
1/2 cup fresh cilantro leaves, chopped
1 lemon
2 ripe Hass avocados, sliced, for garnish
1 cup chopped Castelvetrano olives, for garnish

Steps:

  • For the chicken: Preheat the oven to 325 degrees F.
  • Heat a large enameled cast-iron pot over medium-high heat, and add the oil. Mix the chili powder, cumin and coriander together in a bowl. Sprinkle the chicken liberally with salt and pepper and the spice mixture. Add the chicken to the pot, skin-side down, and sear until the skin is golden brown; flip, and sear for another 3 minutes. Remove the chicken thighs to a small baking sheet and transfer to the oven. Bake until the chicken reaches an internal temperature of 165 degrees F. Remove and let rest.
  • For the rice: Heat the olive oil over medium-high heat in the pot that was used for the chicken. Add the onions, peppers, celery, marjoram and thyme. Season with salt and pepper. Cook until the onions become translucent, then add the garlic; cook for another 3 minutes. Add tomato puree and cook for 2 minutes. Add the rice and saute for 2 minutes. Add the chicken stock, bring to a boil and then reduce to a low simmer. Place in the oven and cook for 20 minutes, or until rice is cooked.
  • Let the rice sit for at least 5 minutes, then fluff with a fork. Add the cilantro, and season to taste with salt, pepper and lemon juice. Garnish with avocado and olives.

LEMON PASTA WITH CHICKEN AND PINE NUTS

2 tablespoons plus 2/3 cup canola oil or vegetable oil
3/4 pound skinless boneless chicken breast halves
12 ounces lemon-pepper fettuccine or regular fettuccine
2 1/2 cups snow peas (about 5 ounces), cut into matchstick-size strips
3/4 cup pine nuts, toasted
3/4 cup chopped fresh Italian parsley
3 tablespoons fresh lemon juice
2 1/2 tablespoons Dijon mustard

Steps:

  • Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add chicken and sauté until cooked through, about 5 minutes per side. Cool. Cut chicken crosswise into 1/4-inch-thick strips.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well; transfer to large bowl. Add 1 tablespoon oil; toss to coat. Add chicken, snow peas, pine nuts and parsley; toss to incorporate all ingredients.
  • Whisk lemon juice and mustard in medium bowl. Add remaining 3/4 cup oil in thin stream, whisking constantly. Season to taste with salt and pepper. Toss pasta with enough dressing to coat. (Can be made 3 hours ahead. Cover and refrigerate. Toss before serving.)

3 tablespoons olive oil
6 bone-in, skin-on chicken thighs
Salt and pepper
2 white or yellow onions, sliced
2 celery stalks, chopped
8 garlic cloves, smashed, peeled and left whole
2/3 cup dry white wine
3 tablespoons sherry vinegar, plus more if needed
3 tablespoons pine nuts
4 dried bay leaves
4 whole cloves (or a pinch of ground cinnamon)
Pinch of saffron (optional)
1 pound baby potatoes, washed and halved
3 ounces kale, stemmed, leaves thinly sliced
2 tablespoons unsalted butter
1/4 cup chopped Italian parsley, plus more for serving

Steps:

  • In a Dutch oven large enough to hold the chicken in one layer, heat the olive oil over high until shimmering. Season chicken pieces on the skin side with salt and pepper, then lay them in the pan, skin-side down. Adjust the heat so they sizzle but do not pop or scorch. Cook until skin is deeply browned and comes away easily from the pan, about 10 minutes. Remove and set aside.
  • Add onions, celery and garlic to the fat in the pot, season with salt and cook, stirring until softened, about 5 minutes, scraping up the browned bits at the bottom of the pan. Deglaze with the wine and vinegar. Stir in 1/2 cup water, pine nuts, bay leaves, cloves and saffron (if using). Return the chicken pieces to the pan, and nestle them into the liquid, skin-side up.
  • Cover tightly and let cook undisturbed over the lowest possible heat until cooked through, about 45 minutes.
  • Add the potatoes, then add more water until the liquid barely covers the potatoes. If in doubt, use less; you can always add more. Cover again and cook another 20 minutes.
  • When ready to serve, gently reheat. Taste the cooking liquid and season with salt, pepper and a drop more vinegar if needed. Stir in the kale and simmer, uncovered, until completely cooked through, about 5 minutes. Stir in butter and parsley and serve, sprinkling each serving with more parsley.

8 skinless chicken breasts
300g young spinach leaves, washed
3 tbsp toasted pine nut
2 tbsp raisin , chopped
pinch Chinese five-spice powder
75g butter
8 thin slices bayonne ham or prosciutto
2 tbsp olive oil
3 shallots , finely chopped
150ml dry white wine
juice ½ lemon
200g tub crème fraîche
handful chives

Steps:

  • Heat oven to 190C/170C fan/gas 5. Split each chicken breast almost in half and open out like a book. Put each piece of chicken between 2 sheets of cling film and, using a rolling pin, bat out to flatten. Season the chicken all over.
  • Put the spinach in a colander and pour over boiling water from the kettle to wilt the leaves. Press out as much water as possible, then tip into a bowl. Add the pine nuts, raisins and spice, season, and mix well to combine. Melt half the butter and add to the bowl.
  • Place a slice of ham or prosciutto over each chicken breast and spread with a thin layer of spinach mixture. Roll up and secure with cocktail sticks or string. Heat a knob more of butter and the oil in a pan. Fry the chicken rolls until browned, then remove to a roasting tin and roast for 10-15 mins until cooked through.
  • Add the shallots to the pan with the remaining butter and cook gently until softened but not browned. Add the wine and lemon juice, bring to the boil, then simmer until reduced by half.
  • Stir in the crème fraîche and simmer for 1-2 mins until thickened. Snip the chives into the sauce and stir lightly. Remove cocktail sticks or string, then slice the chicken and place on warmed plates. Spoon the sauce around and serve with the tians and potatoes.

1 ¼kg chicken , jointed and on the bone (ask your butcher to do this for you or see Know-how)
2 tbsp olive oil
2 onions , chopped
3 garlic cloves , chopped
good pinch of saffron (about 20 strands)
125ml glass dry sherry (such as Fino or Manzanilla)
200ml chicken stock
1 tbsp thyme leaves
50g raisins
2 tbsp pine nuts
handful chopped flat-leaf parsley , to serve

Steps:

  • Heat a large frying pan on a high heat and season the chicken. Add the olive oil to the pan, then the chicken. Brown for about 5 mins on each side, remove onto a plate, then set aside.
  • Lower the heat to medium. In the remaining fat, fry the onions for 3 mins, then add the garlic and saffron. Cook for 3-4 mins more. Add the sherry, then simmer for 3-5 mins until syrupy.
  • Put the chicken leg pieces back into the pan, tip in the stock, thyme and raisins, cover, then gently cook on a low heat for 20 mins. Add the breast meat and any juices left on the plate. Simmer for 10 mins more until cooked through and the sauce in the pan has reduced.
  • While the chicken is cooking, heat oven to 200C/180C fan/gas 6. Scatter the pine nuts over a baking sheet, then roast for 10 mins until golden and toasted. Once the chicken has cooked through, season to taste, scatter with pine nuts and parsley, then serve with rice.
