1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
1 bag (5 oz) baby spinach
8 oz feta cheese, crumbled
1/4 cup olive oil
1 tablespoon chopped fresh oregano leaves
1/2 cup Progresso™ reduced sodium chicken broth (from 32-oz carton)
1 lb chicken tenders, cut in 1-inch pieces (about 11 tenders)
1 teaspoon Greek seasoning
1 teaspoon finely grated lemon peel
2 tablespoons sliced green onions

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
  • Meanwhile, in large bowl, mix tomatoes, spinach, about half of the cheese, the olive oil and oregano; stir in cooked pasta. Spoon mixture into baking dish. Drizzle broth over pasta mixture. In same bowl, mix chicken and seasoning until well coated. Place chicken pieces over orzo mixture; cover with foil.
  • Bake 45 minutes; remove foil, top with remaining cheese. Bake 4 to 5 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Top with grated lemon peel and green onions.

4 celery ribs, chopped
1 green bell pepper, chopped
1 tablespoon minced fresh garlic (or to taste)
2 -4 tablespoons oil
2 1/2 cups cooked chicken (can use less) or 2 1/2 cups cooked turkey, cubed (can use less)
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded mozzarella cheese
1 cup mayonnaise
1 teaspoon dried parsley
salt and pepper
14 slices day-old bread, cubed
4 eggs
2 cups milk or 2 cups half-and-half cream
1 (10 ounce) can cream of chicken soup, undiluted
1 -2 tablespoon Worcestershire sauce
1/2 cup grated parmesan cheese, divided (or to taste)

Steps:

  • Butter a 13 x 9-inch baking dish.
  • In a skillet sauté onion, celery, bell pepper and garlic in oil until soft (about 5 minutes).
  • Transfer the veggies to a large bowl.
  • Add in cooked chicken or turkey, both cheeses, mayonnaise, parsley salt and pepper; mix to combine.
  • Place half of the bread cubes in the prepared baking dish.
  • Top with the chicken mixture.
  • Sprinkle with about 1/4 cup Parmesan cheese.
  • Top with remaining bread cubes.
  • In a bowl beat eggs with a whisk; add in milk or half and half cream (if using) undiluted soup and Worcestershire sauce.

1 package Stove Top stuffing mix, for turkey
1 (10 ounce) can cream of mushroom soup
1/2 cup sour cream
2 cups frozen mixed vegetables
2 cups diced cooked chicken or 2 cups cooked turkey
2 green onions, sliced

Steps:

  • Combine butter, contents of vegetable/seasoning pouch and stuffing crumbs in 2 qt (2 L) casserole.
  • Reserve 1 cup (250 mL) of mixture.
  • Spread remaining stuffing crumbs evenly in bottom of dish.
  • Blend soup and sour cream in a large bowl.
  • Stir in remaining ingredients; spread over stuffing crumbs in pan.

1 (10 ounce) package Stove Top stuffing mix (any kind)
4 cooked chicken breasts (or 1 pint of canned turkey or chicken)
1 (10 ounce) can cream of chicken soup
1 tablespoon mayonnaise
2 tablespoons sour cream
2 eggs
1 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Make stuffing according to directions.
  • Put 1/2 of the stuffing in the bottom of an 8x11 baking pan.
  • Shred or chop the chicken/turkey into 1 inch pieces and place over the stuffing layer.
  • Mix soup, mayo, sour cream together and spread over the chicken/turkey.
  • Spread the remaining stuffing over the soup layer.
  • Beat the two eggs with the 1 cup of milk and pour over all.
  • Bake 1 hours.

Occasionally we will have a roast turkey as a treat and this is what I make with the leftovers. I haven't made it with chicken yet but I'm sure it is just as tasty as with the turkey. It is also kid friendly, my 17 month old daughter will eat this no problem. (Cooking time includes 10 mins approx for cooking of rice)

1 small onion, diced
1 garlic clove, minced
1 red capsicum, chopped (bell pepper)
1 cup canned corn kernel
1 cup chicken stock
1 1/2 teaspoons dried thyme
2 cups cooked rice
1/4 cup sour cream
1 -2 tablespoon mustard (any is fine, choose your favourite)
1 cup cooked chicken or 1 cup cooked turkey, diced
1/2 cup tasty cheese, shredded
2 tablespoons parsley, chopped

Steps:

  • Pre-heat oven to 180C and spray a casserole dish with nonstick cooking spray.
  • Heat oil in a frypan and add garlic and onion, saute for 3 minutes.
  • Add the capsicum, corn, 1/4 cup stock, thyme and pepper, cook until capsicum softens, approx 3 minutes.
  • Stir in the remaining stock, rice, sour cream and mustard. Add the chicken and remove from heat.
  • Stir in 1/3 of the cheese and parsley until well combined.

  • Cook for approx 20-25 mins until the casserole is heated through and the cheese has melted.
