1 teaspoon salt
1 pinch ground black pepper
1/4 teaspoon dried tarragon
1 cup chicken broth
3 tablespoons all-purpose flour
1/2 cup milk
1 lb chicken breast, cooked and diced
1 egg yolk, beaten
1 tablespoon lemon juice
1/4 cup sherry wine
1 red bell pepper, chopped
1 avocado, peeled, pitted and diced

Steps:

  • Saute onion in oil for about 3 minutes. Stir in the flour, salt, ground pepper, tarragon, chicken broth and milk and cook until the mixture thickens, stirring constantly.
