  • In a small bowl, combine margarita mix, lime juice and garlic. Pour 1 cup marinade into a shallow dish. Add chicken; turn to coat. Cover and refrigerate for 2-4 hours. 1 cup liquid margarita mix
1 teaspoon garlic powder
fresh ground black pepper, to taste

Steps:

  • Pour margarita mix over chicken breasts, and marinate for 2 hours in refrigerator.
  • When ready to prepare, drain and dust chicken breasts with black pepper.
  • Grill on an outside grill (or George Foreman works) 3-4 minutes on each side.
  • If you do not have a grill use an iron skillet. Bring to medium high temperature and spray skillet with an oil coating. Braise the chicken breasts until done on each side. Place chicken breasts atop Black Beans.

2/3 cup tequila
1/2 cup fresh cilantro leaves, chopped

  • Rinse the chicken breasts and pat dry; set aside.
  • In a small bowl, combine the remaining ingredients. Place the chicken and marinade in large resealable plastic bag. Squeeze out the air and seal. Let marinate in the refrigerator for 1 to 2 hours.
  • Set up the grill for direct cooking over medium heat and oil grate when ready to start cooking. Remove the chicken from the refrigerator and let sit at room temperature for 30 minutes.

1 teaspoon grated lime zest (from 2 limes) plus 6 tablespoons lime juice (from 4 limes)
1 teaspoon grated orange zest (from 1 orange) plus 1/2 cup orange juice (from 1 orange)
1 tablespoon agave nectar
6 to 8 pequin chile peppers, crushed (see Cook's Note)
Kosher salt
Nonstick cooking spray

Steps:

  • Place the chicken wings in a resealable plastic bag. In a small bowl, whisk together the tequila, lime zest and juice, orange zest and juice, agave, crushed peppers and 1/2 teaspoon salt. Pour over the wings and seal the bag. Toss the wings in the marinade to coat. Place in the refrigerator and allow to marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet with nonstick cooking spray. Lay the wings out on the tray so they do not touch each other. Bake, flipping the wings halfway through, until cooked through and beginning to brown, about 25 minutes.

Got this off of the Atkins Web site, really good!! Marinate time: 4 hours If you like the heat of hot peppers, add a big pinch of chili powder to the marinade or top the fajitas with shredded jalapeno jack cheese.

12 ounces boneless skinless chicken breast halves, cut into 2 x 1/2 inch strips
5 tablespoons canola oil, divided
2 tablespoons fresh lime juice
1/4 cup tequila or 1/4 cup water
2 tablespoons chopped fresh cilantro, divided
2 cloves garlic, pushed through a press
1 teaspoon ground cumin
3/4 teaspoon lime zest
1/2 teaspoon salt
1/4 teaspoon pepper
8 low-carb flour tortillas
1 small onion, thinly sliced
1 small green bell pepper, cut into thin strips
1 small tomatoes, chopped
sour cream (optional)
green chili salsa (optional)

Steps:

  • Place chicken, 1/4 cup of the oil, lime juice, tequila, 1 tablespoon of the cilantro, garlic, cumin, lime peel, salt and pepper in a plastic bag and marinate, refrigerated, 4 hours or overnight.
  • Drain chicken and discard marinade.
  • Heat oven to 350°F.
  • Wrap tortillas in foil and place in oven.
  • Heat remaining tablespoon oil in a large skillet over medium-high heat and cook onion 3 minutes, until softened.
  • Add pepper strips and cook 2 minutes, until crisp-tender.
  • Transfer vegetables to a bowl.
  • Add chicken to skillet and cook about 5 minutes per side, until cooked through (add more oil if necessary).
  • Stir in vegetables and tomato.
  • Cook, stirring, 2 minutes more.
  • Stir in remaining cilantro.
  • To serve, spoon chicken mixture onto tortillas and top with sour cream and salsa, if desired.

2 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon green pepper sauce
1 cup chopped fresh cilantro
2 limes, zested and juiced
2 pounds chicken drumsticks
Large zip-top bag (optional)
Nonstick aluminum foil
½ teaspoon Miami-style cuban seasoning (sazon completa)

Steps:

  • Combine in medium bowl: mayonnaise, oil, cumin, pepper sauce, cilantro, lime juice, and lime zest. Reserve 1/2 cup marinade for later use. Place remaining marinade and chicken in zip-top bag (or shallow dish); seal bag and toss to coat. Let stand 10 minutes (or refrigerate overnight) to marinate.
  • Preheat oven to 450 degrees F. Line baking sheet with foil.
  • Arrange chicken 2 inches apart on baking sheet and sprinkle with seasoning; bake 10 minutes.
  • Turn chicken over; bake 10 more minutes or until chicken is 165 degrees F. (For more browning, broil 2-3 minutes.) Brush reserved marinade over chicken. Serve.

15 ounces black beans, rinsed and drained
1 (8 ounce) can pineapple tidbits, drained (juice pack)
1/4 cup finely chopped red onion
1 fresh jalapeno pepper, seeded and finely chopped
2 tablespoons snipped fresh cilantro
4 teaspoons lime juice
1/4 teaspoon salt
4 large boneless skinless chicken breast halves (1-1/4 lb. total)
1/4 cup tequila
1/4 cup lime juice
1 tablespoon cooking oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 flour tortillas, taco size

Steps:

  • For salsa, in a medium bowl, stir together the beans, pineapple, onion, jalapeño peppers, cilantro, chipotle pepper, the 4 teaspoons lime juice, and 1/4 teaspoon salt. Cover and chill in the refrigerator while chicken marinates.
  • Place the chicken in a self-sealing bag set in a large bowl; set aside. In a small bowl, stir together the tequila, 1/4 cup lime juice, oil, 1/4 teaspoon salt, and ground black pepper. Pour over chicken in bag. Seal bag. Marinate in the refrigerator for 1 hour, turning bag occasionally. Meanwhile, wrap tortillas in heavy foil; set aside.
  • Drain chicken, discarding marinade. Place chicken on the rack of an uncovered grill directly over medium coals. Grill for 12 to 15 minutes or until chicken is tender and no longer pink and an instant-read thermometer inserted in centers registers 170 degree F. During the last 5 minutes of cooking, place foil-wrapped tortillas next to chicken on the grill rack until heated through, turning once. Remove chicken to a cutting board.
  • Cut chicken into 1/2-inch-thick slices. Divide chicken among tortillas and top with salsa. Roll up.

4 cups corn flaked cereal, crushed to 2 cups
1/2 cup flour
1 tablespoon dried oregano
2 teaspoons ground cumin
1 1/2 teaspoons black pepper
2 large eggs
