Time 5h20m

Number Of Ingredients 14

2 pounds boneless skinless chicken breasts ((about 4 medium breasts))
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
1 cup reduced-sugar orange juice
2 tablespoons honey
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons minced garlic (about 2 cloves)
2 teaspoons minced fresh ginger
1/2 teaspoon red pepper flakes (or more to taste)
3 tablespoons cornstarch
Prepared brown rice (for serving)
Sliced green onions (optional for serving)
Sliced or slivered toasted almonds ( and/or toasted sesame seeds optional for serving)

Steps:

  • Coat the bottom of a 4-quart or larger slow cooker with nonstick spray. Arrange the chicken in the bottom, then sprinkle with salt and pepper.
  • In a medium bowl or large measuring cup, whisk together the orange juice, honey, soy sauce, rice vinegar, garlic, ginger, and red pepper flakes. Pour over the chicken. Cover and cook for 1 1/2 to 2 1/2 hours on high or 5 to 6 hours on low, until the chicken registers 165 degrees F and is cooked through. With a slotted spoon, remove the chicken from the slow cooker and let cool slightly. Cut into bite-sized pieces.
  • With a mesh sieve, strain the sauce into a bowl or measuring cup. Discard the solids, then return the liquid to the slow cooker. Turn the slow cooker heat to high. Mix the cornstarch with 3 tablespoons water to create a slurry, then stir it into the slow cooker sauce. Cover and cook on high until the sauce thickens, about 10 minutes, stirring it often. Return the chicken pieces to the slow cooker and stir to coat with the sauce. Serve with prepared rice, sprinkled with green onions and toasted almonds or sesame seeds as desired.

Provided by Geema

Categories     Stew

Time 6h10m

Yield 4 serving(s)

Number Of Ingredients 5

6 ounces frozen orange juice concentrate, undiluted
1/2 teaspoon dried marjoram
6 boneless skinless chicken breasts, excess fat removed
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Combine thawed orange juice and marjoram in shallow dish.
  • Dip each breast in orange juice mixture and put in Crock pot.
  • Pour remaining sauce over breasts, then cover; cook on Low 7- 9 hours or on High: 4- 5 hours.
  • Stir water and cornstarch together and then add to the sauce left in the crock pot at the end of the cooking time to thicken it.

Tips:

  • Prep the Chicken: Ensure the chicken breasts are evenly sized for consistent cooking. Cut them into 1-inch pieces for a quicker cooking time.
  • Marinate: Marinating the chicken in the orange juice and spices enhances its flavor. For best results, marinate the chicken for at least 30 minutes, or up to overnight.
  • Use Fresh Orange Juice: Freshly squeezed orange juice adds a vibrant flavor to the dish. If using store-bought juice, choose 100% pure orange juice without added sugars.
  • Simmer the Sauce: Allow the orange sauce to simmer gently on the stovetop or in the slow cooker to meld the flavors and thicken the sauce.
  • Thicken the Sauce: If desired, thicken the orange sauce with a cornstarch slurry made from equal parts cornstarch and water. Add it to the simmering sauce while stirring continuously until the desired consistency is achieved.
  • Garnish Before Serving: Before serving, garnish the Chicken l'Orange with fresh orange zest, chopped parsley, or green onions for an appealing presentation.
