I got this from the side of a stuffing box mix, tried it for dinner one day and ate the leftovers the next. Thought you might like it.

Number Of Ingredients 8

1 (10 ounce) package herb seasoned cubed seasoned stuffing mix
1/2 cup melted butter
1/2 cup chicken broth
2 lbs boneless skinless chicken, Cut Up
2 (10 3/4 ounce) cans condensed cream of mushroom soup
1 (9 ounce) package cut green beans
1/2 cup milk
8 ounces cheddar cheese

Steps:

  • In a bowl, mix stuffing, butter and broth.
  • Pour mixture into a greased 9x13x2-inch baking pan and spread evenly.
  • In another bowl, mix chicken, soup, green beans and milk. Spread evenly over stuffing.
  • Cover and bake in a preheated 350 degree oven for 40 to 45 minutes.
  • Remove from oven, uncover and sprinkle with cheese.
  • Replace in oven for an additional 10 minutes.
  • FOR A CHANGE... any of the following ingredients may be added to the recipe: cooked drained giblets, fresh or canned drained oysters, dried figs or apricots, green peppers, carrots, nuts, fresh apples, sautéed and drained pork sausage, fresh or canned sliced mushrooms or water chestnuts, pineapple chunks.
  • Where liquid is called for in recipe you may substitute the liquid drained from any ingredient.

6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
8 ounces cremini mushrooms, halved
3 large shallots, diced
2 stalks celery, diced
3 cloves garlic, minced
3 tablespoons all-purpose flour
1/2 cup dry white wine
2 cups chicken stock
1 pound baby gold potatoes, halved
4 sprigs fresh thyme
1 sprig fresh rosemary
1 bay leaf
1/4 cup heavy cream

Steps:

  • Preheat oven to 325 degrees F. Season chicken thighs with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Working in batches, add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Add mushrooms, shallots and celery, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste. Stir in garlic until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Stir in wine, scraping any browned bits from the bottom of the skillet. Stir in chicken stock, potatoes, thyme, rosemary and bay leaf. Return chicken to the skillet. Place into oven and bake until potatoes are tender and chicken has completely cooked through, reaching an internal temperature of 175 degrees F, about 40-45 minutes. Stir in heavy cream; season with salt and pepper, to taste. Serve immediately.

1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
32 buttery round crackers
¼ cup chopped onion
¼ cup chopped mushrooms

  • Preheat oven to 350 degrees F (175 degrees C).
  • Boil chicken until cooked through (no longer pink inside), about 20-30 minutes. Chop into bite size pieces and place in a 9x13 inch baking dish.

1/4 cup butter
4 large chicken breasts, halved
1 large onion, chopped
1 clove garlic, minced
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
1 teaspoon ginger
1/4 teaspoon chili powder
1 cup canned tomato
1 cup chicken broth
1 can sliced mushrooms or 1/2 cup fresh sliced mushroom
1 tablespoon cornstarch
1 cup heavy cream

Steps:

  • Brown chicken with onions and garlic.
  • Add seasonings, tomatoes, broth and mushrooms.
  • Simmer covered for 40 minutes or until chicken is tender.
