6 lasagna noodles, cooked
1 chicken, stewed and cut up or 1 use rotisserie chicken
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of celery soup
2/3 cup milk
1/2 teaspoon salt
1/2 cup celery, diced
1/4 cup onion, diced
6 ounces cream cheese
1 (6 ounce) container cottage cheese
1 (6 ounce) box Stove Top stuffing mix

Steps:

  • Steam celery and onion in microwave until soft.
  • Add soups, milk and salt.
  • Mix well.
  • Add cream cheese and cottage cheese and heat until cream cheese melts.

4 (6 ounce) skinless, boneless chicken breast halves - cut into 1 inch strips
1 (14.5 ounce) can chicken broth
1 (10 ounce) package frozen spinach, thawed and drained
1 (8 ounce) package cold cream cheese, cubed
10 cherry tomatoes, halved
1 (16 ounce) package dry penne pasta

Steps:

  • Bring large pot of water to a boil, and stir in penne pasta.
  • Meanwhile, in a large skillet over medium heat, cook chicken cubes in broth; simmering until done, about 10 minutes. Stir in cubed cream cheese and spinach. Return to simmer, and cook about 5 minutes, stirring occasionally. Stir in cherry tomatoes, and cook about 3 minutes more.
  • In a large bowl, mix together cooked, drained pasta and sauce. Let stand a few minutes before serving.

12 - 14 fresh chicken wings, split at the joint and tips removed
2 large eggs, beaten
2/3 c all purpose flour
1 Tbsp seasoned salt
1/8 tsp cayenne pepper, more if you like
2 tsp garlic powder
2 tsp paprika
1 tsp pepper

Steps:

  • 1. Put beaten eggs in a bowl. In another bowl, combine flour with the next 5 spices. Dip wings first into the eggs, drip off excess, then coat with the flour mix.
  • 2. Transfer to a rack and allow to sit at room temperature for 30 minutes. (This is important!)
  • 3. Heat oil in deep fryer to 375 degrees. deep fry wings in batches until golden brown. About 8 minutes. Remove and drain on paper towels.

6 (10 3/4 ounce) cans chicken broth or 6 (10 3/4 ounce) cans homemade chicken stock
5 cooked chicken breasts, chopped into 1 pieces (or use purchased rotisserie chicken)
1 cup celery, sliced
2 medium onions, chopped
2 cups carrots, sliced
1 (14 ounce) can corn, drained
1 teaspoon dried sage or 2 teaspoons fresh sage, minced
1 tablespoon thyme
1 teaspoon rosemary
1/2 bunch fresh cilantro, less stems and chop
salt & freshly ground black pepper, to taste
3 cups egg noodles, cooked

Steps:

  • In stock pot, cook onions and celery in olive oil until tender.
  • Add 5 cans of chicken broth, carrots, corn and seasonings.
  • Bring to boil, reduce heat to simmer, and cook for 2 hours.
  • Add remaining can of broth, chicken and noodles, stir to combine and cook until noodles are tender.
  • Variation: CROCKPOT.
  • Lightly spray inside of crock pot with cooking spray.
  • Follow instructions above; cooking for 6 hours on LOW or 3 hours on HIGH; add chicken and uncooked noodles and cook on HIGH for 1 ½-2 hours until noodles are tender.
