KASHMIRI CHICKEN

A delicious sweet and sour chicken that can be eaten alone or with rice and naan.

500 g chicken pieces
4 to 5 whole Kashmiri red chilies (see notes)
¼ cup raisin (see notes)
2-3 cloves garlic
½ teaspoon cumin
1 teaspoon coriander seeds (optional)
½ cup yogurt
¼ cup oil
2 tablespoon oil
¼ teaspoon cumin seeds
½ teaspoon mustard seeds
½ teaspoon black seeds
2 twigs curry leaves (optional but recommended.)
3-4 round red chilies ((sabut gol mirch))

Steps:

  • Break Kashmiri chili into small pieces and grind it to powder. Soak Kashmiri lal mirch powder for 5 minutes in ¼ cup boiling hot water to bring out that vibrant red color.
  • Soak raisins for 5 minutes in boiling hot water to make them soft. Discard the water.
  • Blend soaked Kashmiri chili, garlic, soaked raisin, cumin, and yogurt together until you have a smooth paste. This will take some time about 2 minutes.
  • Marinate chicken in kashmiri paste for 10 minutes in the paste.
  • Stir fry chicken for 2 minutes on high heat. Then cover and cook the chicken on medium heat for 20 minutes until the chicken is tender. Add 1/4 cup water if needed.
  • For tempering, heat oil in a pan and add curry leaves, cumin seeds, round chilies, mustard seeds, and kalonji (black seeds). Cook for a minute. Now add the tempering to the chicken and cover it to let the aroma infuse in the chicken very well.
  • Cook Chicken until it reaches desired consitency then serve.

This is one of my favorite ways to prepare chicken. It comes from "Complete Indian Cooking", a cookbook I received as a gift for my wedding. The addition of plain yogurt toward the end of the cooking time gives this a deliciously mild and creamy flavor, which makes a wonderful contrast to all the spices. This is best eaten with some good basmati rice, but plain jasmine rice works too.

4 tablespoons ghee or 4 tablespoons vegetable oil
3 large onions, finely sliced
10 peppercorns
10 cardamoms
2 inches cinnamon sticks
2 inches fresh gingerroot, chopped
2 cloves garlic, finely chopped
1 teaspoon chili powder
2 teaspoons paprika
3 lbs skinless chicken pieces (I like boneless, skinless thighs)
1 cup plain yogurt
salt

Steps:

  • Heat the ghee or vegetable oil in a deep, lidded skillet.
  • Add the onions, peppercorns, cardamoms, and cinnamon and cook until the onions are golden.
  • Add the ginger, garlic, chili powder, paprika, and salt (to taste) and cook for 2 min, stirring occasionally.
  • Add the chicken pieces and fry until browned.
  • Gradually add the yogurt, stirring constantly.
  • Cover and cook gently for about 30 minutes.

Tips:

  • For the best flavor, use fresh, free-range chicken.
  • If you don't have yogurt on hand, you can substitute sour cream or buttermilk.
  • Be sure to marinate the chicken for at least 30 minutes, or up to overnight, to allow the flavors to develop.
