4 boneless chicken thighs ((with skin))
½ lb fresh coconut (, coarsely grated)
3 scallions (, finely chopped)
4 red and/or green chili peppers
½ cup fresh lemon juice
4 small tortillas (, heated on the grill)
Juice of 2 lemons and their zest
3 tablespoons white vinegar
½ cup soy sauce
3 scallions (, chopped)
3 red and/or green hot peppers
A few cherry tomatoes (, sliced)

Steps:

  • Marinate the chicken in half the lemon juice and scallion.
  • Grill the chicken thighs on the barbecue for about 8 minutes on each side.
  • Remove the skin and cut into small pieces.
  • Mix with coconut, onions, lemon juice, and chilies.
  • Add salt and pepper
  • Serve with tortillas.

1/2 cup soy sauce

1 lb medium shrimp, peeled and deveined (head and tails removed)
1 small onion, peeled and finely minced
2 small red bird's eye chilies, finely minced
1 cup unsweetened coconut, grated (use fresh if possible)
3 tablespoons lemon juice (or more to taste)
10 medium jalapenos, stemmed and very finely minced
1/3 cup soy sauce
1/2 cup lemon juice
1/2 cup chopped onion

Steps:

  • Cook shrimp in boiling water until they just turn pink. Drain and run under cold water. Drain again.
  • Chop boiled shrimp into small pieces.
  • In a bowl, mix shrimp, onion, red peppers, coconut and lemon juice (increase lemon juice to taste if needed).
  • Cover and chill for a few hours.
  • Serve on warmed fresh tortillas, or Flour Titiyas, with the sauce on the side. (If using as a salad, pour sauce over shrimp, mix, and serve on lettuce leaves).

1 tablespoon salt
1 (3 pound) whole chicken, cut into pieces
½ cup lemon juice
1 cup grated fresh coconut
1 hot chile pepper, minced

Steps:

  • Sprinkle chicken with salt and place pieces on a broiler pan. Broil for about 10 minutes, turn and broil for another 5 minutes or until chicken is cooked, but still moist.
  • Bone, and finely chop cooked chicken pieces.
  • In a medium bowl combine the chicken, lemon juice, coconut, and hot peppers. Chill for at least one hour and serve.

1 (3 pound) whole chicken
1 coconut, drained and meat grated
2 lemons, juiced
1 bunch green onions, chopped
3 tablespoons dried red pepper flakes
salt to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place whole chicken into a roasting pan. Roast in the oven for 1 hour, or until the leg moves easily within its socket. Remove from the oven, and allow the chicken to cool slightly.
  • Remove the skin from the chicken and discard. Tear the meat from the bones, and chop into small pieces. Discard bones, and place the chicken in a large bowl. Stir in green onions and grated coconut. Sprinkle liberally with lemon juice. Season with salt and red pepper flakes. Taste and adjust amounts of lemon juice, salt and red pepper so that one does not overwhelm the others.
