1/2 lb mushroom
1 clove garlic, crushed
1 onion, chopped
6 pieces chicken (I use breasts)
1/2 bottle white wine
2 ounces butter
1/2 pint heavy cream
4 ounces Stilton cheese (grated, or more if desired)
1 bay leaf
1 -2 ounce flour
2 tablespoons chopped fresh parsley

Steps:

  • Chop onion, crush garlic and fry in butter, put into casserole dish with the chicken pieces, bay leaf, mushrooms and wine.
  • Season to taste.
  • Cook in 325 oven for 20 minutes or until cooked.
  • SAUCE: Put some butter in a pan and add flour to make a roux, add salt and pepper to taste.
  • Strain wine from the casserole and keep the chicken warm.
  • Add wine to the roux with the cream and stir constantly on a very low heat until smooth.
  • Add the stilton, pour over top of chicken and sprinkle with parsley.
  • Enjoy.

  • pre heat the oven at 180C, then cut the chicken down the side but not all the way through just enough so you have a small space to fit a quarter of the cheese, then go on to put a quarter of the cheese in each breast,wrap breasts in bacon you can secure the bacon with a cocktail stick but it is not essential. Place the chicken in the middle of the oven for 25-30 mins depending on size.
  • Whilst the chicken is cooking put the 400ml creme fraiche in a small sauce pan with the rest of the Stilton and heat on a low heat, stirring constantly until the cheese is melted then add the cider vinegar you can allow the sauce to cool then heat before serving. depending on how light and fresh you want the sauce feel free to add more or less vinegar.

4 boneless skinless chicken breast halves (about 1 1/2 pounds)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 tablespoon chopped fresh rosemary
1 tablespoon unsalted butter
1 1/2 teaspoons extra-virgin olive oil
2 unpeeled Honeycrisp or Fuji apples, cored and sliced 1/4 inch thick (about 2 1/4 cups)
2 ounces Stilton cheese, crumbled (about 1/3 cup)

Steps:

  • Preheat the oven to 425°F. Lightly oil a small, rimmed baking sheet with extra-virgin olive oil or coat with nonstick cooking spray. Season the chicken breasts with salt and pepper, and sprinkle with the rosemary.
  • Melt the butter with the oil in a large nonstick skillet over medium-high heat. Cook the chicken for 6 minutes or until browned on both sides, turning once. Transfer to the baking sheet. Add the apple slices to the skillet and cook over medium-high heat for 3 to 4 minutes, or until slightly softened and lightly browned. 40g dried porcini mushrooms
3 tbsp olive oil
1 shallot , finely chopped
1 garlic clove , finely chopped
100g baby leaf spinach
150g ricotta
50g firm mozzarella , coarsely grated
20g parmesan , finely grated
4 skinless chicken breasts
4 slices prosciutto

Steps:

  • Boil the kettle, tip the mushrooms into a small bowl, pour over boiling water to just cover, then leave to soak for 15 mins. Drain and squeeze out the mushrooms (save and freeze the liquid to make a base for a gravy) and roughly chop.
  • Heat the oil in a frying pan and gently cook the shallots and garlic for 3 mins. Turn up the heat, throw in the mushrooms and cook for a few mins more. Add the spinach, turn the heat up to high and cook until wilted and all the liquid has evaporated. Tip into a bowl and leave to cool. Beat in the cheeses and season with loads of pepper and a little salt. Set aside.
  • Take the chicken breasts and remove the small fillet from the back. Cut a slit into the side of each chicken breast then stuff each one with a quarter of the spinach mixture, closing it with the cut-off fillet. Carefully wrap each stuffed chicken breast in a slice of prosciutto and chill until needed. Can be prepared up to a day ahead.
  • To cook, heat oven to 200C/180C fan/gas 6. Line up the chicken on a baking tray and roast for 20-25 mins until the prosciutto is frazzled at the edges, the cheese is oozing out and the chicken is cooked through.
