4 boneless skinless chicken breasts
1 can Cream of Chicken soup
1/2 c. sour cream
1/4 c. sherry (Cooking sherry from the grocery store or cream sherry from the liquor store)
1 c. sliced mushrooms
1/2 onion - diced
1 TBS butter

  • Preheat oven to 350 degrees 1. While rice is cooking, melt butter in a saute pan over med-hi heat. Add sliced mushrooms and onion and saute until onions are soft and translucent (about 6-7 minutes) 2. Mix onions, mushrooms, sour cream and sherry together in a bowl. 3. 2 sprigs rosemary, stems removed and finely chopped
Zest and juice of 2 lemons
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt
Crushed red pepper flakes
2 airline chicken breasts, skin on
1 tablespoon all-purpose flour
1 1/2 cups chicken stock
Cooked green beans, for serving, optional
Chopped chives, for serving, optional
2 tablespoons extra-virgin olive oil
1 shallot, finely diced
Kosher salt
1 cup long-grain rice
2 cups chicken stock

Steps:

  • For the chicken: Preheat the oven to 400 degrees F. In a small bowl, combine the garlic, rosemary, lemon zest, 2 tablespoons of the olive oil a pinch of crushed red pepper and kosher salt to taste. Set aside.

8 ounces button mushrooms, thinly sliced

3 -4 boneless skinless chicken breasts, cut into 1/2 inch strips (about 2-2 1/2 lbs, I find that 3 breasts adequately feeds my family)
1 tablespoon all-purpose flour
2 tablespoons olive oil
1 onion, halved lengthwise and sliced thin crosswise
2 garlic cloves, minced
1/2 lb mushroom, sliced thin
3 tablespoons medium-dry sherry
1 tablespoon fresh lemon juice
1/3 cup cream
1/2 cup chicken broth
cooked noodles
1 tablespoon minced fresh parsley leaves
