Categories     Penne

Time 30m

Yield 4 , 4 serving(s)

Number Of Ingredients 8

14 1/2 ounces penne (suggest Heartland Perfect Balance Penne)
4 tablespoons extra virgin olive oil
1 teaspoon garlic, chopped
14 1/2 ounces diced tomatoes (undrained)
1/3 cup basil, fresh, chopped
10 ounces chicken breasts, cooked (can use chicken breast strips - 1 package)
6 ounces mozzarella cheese, shredded
salt and black pepper

Steps:

  • Cook and drain pasta according to package directions.
  • Heat olive oil in large skillet over medium high heat. Add garlic and cook for one minute. Add tomatoes and basil; cook 2 minutes. Add chicken; simmer for 5 minutes. Toss with pasta and Mozzarella cheese. Season to taste with salt and cracked black pepper. Serve immediately.
  • Note: if you do not have fresh basil or garlic, you may substitute 1-1/2 teaspoons dried basil and 1/8 teaspoon garlic powder.

Tips:

  • To ensure the penne cooks evenly, break the pasta in half before boiling it. This will help it fit better in the pot and cook more consistently.
  • For a richer flavor, use freshly grated Parmesan cheese instead of pre-packaged shredded cheese.
  • If you don't have fresh herbs on hand, you can use dried herbs instead. Just be sure to use half the amount of dried herbs as you would fresh herbs.
  • If you want a creamier sauce, add a little bit of heavy cream or milk to the pan. You can also add a tablespoon of butter for extra richness.

Conclusion:

This chicken herb penne is a quick and easy weeknight meal that is sure to please the whole family. The combination of tender chicken, flavorful sauce, and al dente pasta is simply irresistible. Serve it with a side of roasted vegetables or a fresh salad for a complete meal.
