12 ounces ditalini or other pasta
1/2 cup reduced-sodium chicken broth
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and ground black pepper
2 cups cooked cubed chicken (about 1 pound)
1 green bell pepper, seeded and diced
1/4 cup chopped fresh mint leaves
1/2 cup crumbled feta cheese

Steps:

  • Cook pasta according to package directions.
  • In a small bowl, whisk together broth, oil, vinegar, Dijon mustard, thyme, salt and pepper to taste. Add diced chicken, green pepper, and mint.

1 pound rigatoni
3/4 pound chicken tenders, 1 package
3/4 pound boneless, skinless chicken thighs, 1 package
Black pepper
6 tablespoons extra virgin olive oil, divided
1 large onion, chopped
7 to 8 garlic clove, grated or finely chopped, divided
2 large or 3 small cubanelle peppers, seeded, chopped
3 roasted red peppers, chopped
6 hot cherry peppers pickled in jar, in Italian section of grocery stores
1 (28-ounce) can crushed tomatoes
1/3 to 1/2 cup cream, eyeball it
1/2 cup grated Romano or Parmigiano Reggiano, plus more to pass at table
1/3 pound thick cut capocolo hot ham, chopped
2 heads escarole, coarsely chopped
1 cup chicken stock
1/2 cup basil, about 10 leaves, thinly sliced
4 pieces crusty bread

Steps:

  • Bring a pot of water to a boil for "riggies". Salt water and cook pasta to al dente. Heads up: you will need to reserve cup of cooking water just before you drain the pasta.
  • Trim up the thighs and chop all the chicken into bite size pieces. Season the chicken with salt and pepper.
  • Heat 3 tablespoons extra-virgin olive oil in a large high sided skillet over medium-high to high heat.
  • Add chicken to hot pan and brown all over, 7 to 8 minutes then remove. Add onions, 3 to 4 cloves of garlic, cubanelle peppers then season with salt and pepper and cook 6 to 7 minutes to soften then add roasted red peppers. Cut tops off the hot peppers and scoop out the seeds with a teaspoon then chop the hot peppers and add them to the skillet. Stir in tomatoes and add chicken back to the sauce. Bring sauce to a bubble then stir in some starchy cooking water from the pasta - about a cup, then add the cream, twice around the pan, about 1/3 to 1/2 cup. Reduce heat to lowest setting and simmer a couple of minutes. Add pasta and 1/2 cup cheese and toss to combine.
  • While the chicken and peppers are cooking, heat 3 tablespoons extra-virgin olive oil in large skillet over medium-high heat. Add chopped ham and cook 2 minutes, add reserved pasta water and garlic and reduce heat a bit. Add greens and wilt down, 2 minutes. Season the greens with salt and pepper, add stock. Simmer greens 5 to 6 minutes and serve.
  • Top the pasta with shredded basil. Pass cheese to top both pasta and greens and serve with crusty bread.

4 pita bread
1 cup plain yogurt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 tablespoon mccormick seasoning
2 -2 1/2 lbs boneless skinless chicken breasts
1 romaine lettuce hearts, chopped
2 tomatoes, chopped
1/2 cucumber, chopped
1/2 red onion, chopped
3 celery ribs, chopped
1/2 cup pitted kalamata olive
6 hot pepperoncini peppers, chopped
1 lemon, juice of
extra virgin olive oil, for drizzling
salt and pepper
1 cup flat leaf parsley
1/2 cup feta
1 garlic clove
1 teaspoon black pepper
3 tablespoons walnuts, chopped
1/4 cup extra virgin olive oil

Steps:

  • Preheat grill pan to high heat (I actually use the charcoal grill outside instead).
  • Heat oven or toaster oven to 250 degrees.
  • Wrap Pita bread in foil and place in oven to warm.
  • Combine yogurt and next four ingredients. Coat chicken in mixture (I use a large ziplock for this part).
  • Grill chicken for 5-6 minutes on each side or until cooked through.
  • Combine lettuce, chopped veggies, olives, and hot peppers in a large serving bowl.
  • Dress salad lightly with lemon juice, olive oil, salt, and pepper.
  • Place remaining ingredients (for pesto) in food processor (except for olive oil).
  • Turn processor on, and stream in olive oil.
  • remove bread from oven and cut into wedges.
  • Place grilled meat on top and dress liberally with pesto.Place pita wedges around the edges.

3/4 cup jumbo green olives with pimientos, about 16 large olives
1 clove garlic, slightly crushed and peeled

1/2 cup grated Parmigiano-Reggiano or Romano, a couple of handfuls

Extra yogurt dresses cucumbers and tomatoes that have had a chance to drain with salt so they taste their most vivid. Feta and olives add briny bites to the creamy, crunchy salad, but feel free to incorporate other elements of Greek salad or tzatziki, like romaine lettuce, bell peppers, mint or dill, toasted walnuts or thinly sliced red onion. Eat with lemon potatoes or toasted pita.

1 1/2 cups plain Greek yogurt
3 garlic cloves, finely grated
Kosher salt (Diamond Crystal)
Black pepper
1 teaspoon dried oregano or mint
2 pounds boneless, skinless chicken thighs, patted dry
1 1/2 pounds cucumbers (preferably Japanese, Persian or mini, seedless cucumbers)
1 pound ripe tomatoes
2 tablespoons extra-virgin olive oil, plus more as needed
4 ounces feta, crumbled (about 3/4 cup)
1/2 cup Kalamata olives, pitted and halved

Steps:

  • In a large bowl, stir together the yogurt and garlic; season to taste with salt and pepper. Transfer 1/2 cup of the yogurt to a medium bowl and reserve for Step 5.
  • Coat the chicken: To the large bowl, add the oregano and stir to combine. Season the chicken all over with 1 1/2 teaspoons salt and a few grinds of pepper. Add the chicken to the large bowl and turn to coat; set aside.
  • Start the salad: Smash the cucumbers with the side of your knife until craggy and split. Rip into ½- to 1-inch pieces and transfer to a colander placed in the sink. Slice or chop the tomatoes into bite-size pieces. Add to the cucumbers along with 1 ½ teaspoons salt. (It may seem like a lot of salt, but most will drain away.) Toss to combine and leave to drain.
  • In a large nonstick or well-seasoned cast-iron skillet, heat the olive oil over medium. Scrape excess marinade off the chicken, then cook the chicken in batches, adding oil to the pan if necessary, until it's well browned and releases from the pan, 5 to 7 minutes. Flip and cook until cooked through, another 5 to 7 minutes. Transfer to plates to rest. (For grilling info, see Tip.)
  • To the medium bowl of yogurt, add the feta and mash with a fork until a chunky paste forms. Shake the cucumbers and tomatoes to get rid of any excess moisture. Add to the feta yogurt along with the olives and stir until coated. The balance is dependent on your produce and feta, so season to taste with salt and pepper until flavors are vivid. Eat alongside the chicken.

1 cup fresh flat-leaf parsley
1/2 cup crumbled feta
1 garlic clove
1 teaspoon coarse black pepper
3 tablespoons chopped walnuts
1/4 cup extra-virgin olive oil (EVOO) (eyeball it)

Steps:

  • Preheat a grill pan to high heat. Heat a toaster oven or oven to 250°F.
  • In a bowl, combine the yogurt, coriander, cumin, oregano, and the grill seasoning. Coat the chicken in the mixture, then thread the meat onto metal skewers. Brush the grill pan with oil and grill the meat for 5 to 6 minutes on each side.
  • Combine the chopped veggies, olives, and hot peppers on a large platter or in a serving bowl. Dress the salad very lightly in lemon juice, EVOO, and salt and pepper.
  • Place all ingredients for the pesto in the food processor except the EVOO. Turn the processor on and stream in EVOO until all is incorporated.
  • Place the grilled meat on the salad and top liberally with the pesto, streaming it back and forth over the salad and the meat.

Brush grill pan and grill meat 5-6 minutes on each side. Combined chopped lettuce, chopped veggies, olives and hot peppers in large bowl. Dress salad lightly in lemon juice, evoo, s & p. Place ingredients for pesto in food processer except evoo. Stream in evoo as processer runs. Place grilled meat on salad and top with pesto. Serve with flat breads.
