1/2 teaspoon salt

1/2 Teaspoon Salt
1/2 Teaspoon Freshly Ground Black Pepper
3/4 Cup Extra Virgin Olive Oil
2 Cups Whole Walnuts
1/2 Cup Sugar
2 (5 Ounce) Bags Baby Mixed Greens
2 Poached Chicken Breasts, Chopped Into Pieces
2 Cups Candied Walnuts (See Recipe Below)
2 Large Ripe Pears
6 Green Onions, Chopped
4 Ounces Gorgonzola Cheese

Steps:

  • If roasting the pears, cut into wedges leaving skin on, and cutting out the core.
  • Place on a baking sheet in a preheated 350 degree oven and cook about 15 minutes or until fork tender.
  • Divide the salad greens onto four individual plates.
  • Place the chicken, walnuts, pears, onions, and gorgonzola cheese on top of the greens.
  • To make the dressing, mix the vinegar in a bowl with salt and pepper until the salt dissolves.
  • Then beat in the oil by droplets, whisking constantly.
  • Taste and adjust the seasonings.

  • For The Candied Walnuts: Preheat the oven to 350 degrees F.

1 lb penne pasta
2 boneless skinless chicken breasts
1/2 teaspoon lemon pepper seasoning (to taste)
2 cups red grapes (seedless, sliced in half)
4 green onions (thinly sliced)
1/3 cup pecans (coarsely chopped)
1/2 cup gorgonzola (crumbled)
1 cup mayonnaise (for best results, use a quality brand like Best Foods)
2 tablespoons extra virgin olive oil
2 tablespoons seasoned rice vinegar (you may use apple cider vinegar, but rice vinegar is better here)
3 tablespoons white sugar (to taste)
1/2 teaspoon kosher salt (regular table salt will be TOO SALTY)
1/4 teaspoon black pepper (to taste)
