8 chicken thighs (with skin and bones (about 3 lbs))
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon olive oil
8 cloves garlic (minced)
2 teaspoon thyme (fresh, chopped)
2 teaspoon oregano (fresh, chopped)
½ cup sherry (or a dry red wine)
½ cup chicken broth (low sodium)

Steps:

  • Season the chicken on both sides with salt and pepper.
  • Add the olive oil to a large saucepan or skillet and cook the chicken on both sides, for about 5 minutes per side or until golden brown.
  • Remove the chicken from the saucepan and set aside.

4 boneless skinless chicken thighs (about 1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
10 garlic cloves, peeled and halved
1/4 cup white wine or chicken broth
1-1/2 teaspoons minced fresh rosemary
1/2 teaspoon minced fresh sage
1 cup chicken broth
Hot cooked rice of your choice

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, heat butter over medium-high heat; brown chicken on both sides. Remove from pan, reserving drippings., In same skillet, saute garlic in drippings over medium-high heat until light golden brown. 2 teaspoons dried tarragon
½ teaspoon salt

½ cup olive oil
4 skinless, boneless chicken breast halves
