CHICKEN FLORENTINE PASTA

Chicken Florentine Pasta image

Chicken Florentine Pasta in a light creamy sauce (it actually doesn't have any cream in it at all!). The spinach in this pasta is vibrant, healthy and tasty. This pasta also reheats really well - creamy as ever!

Categories     Easy

Time 30m

Number Of Ingredients 14

8 oz linguine pasta (cooked to package instructions)
Olive oil to sauté
2 small/medium boneless skinless chicken breasts
1/2 lb button mushrooms (white or brown)
1 bunch green onion ((1 cup chopped) (green and white parts))
2 Tbsp unsalted butter
3 Tbsp all-purpose flour
2-3 garlic cloves (pressed)
1 cup chicken broth
1 cup whole milk
1/2 tsp salt (or to taste)
1/8 tsp black pepper (or to taste)
4 cups fresh baby spinach (loosely packed)
Freshly grated parmesan to serve

Steps:

  • Cook pasta according to package instructions then drain and set aside (while pasta cooks, continue on).
  • Season chicken with salt and pepper. Heat a large, deep pan over medium heat and add 2 Tbsp oil. Add chicken and sauté the first side until golden brown (5 min), flip, cover and sauté another 5 min or until cooked through. Remove from pan and rest 10 min before slicing against the grain.
  • In the same pan, add 1 Tbsp oil if needed along with sliced mushrooms and green onion. Sauté until soft and golden (5 min). Remove from pan and set aside.
  • In the same pan, add 2 Tbsp butter, 3 Tbsp flour and pressed garlic then whisk 2 min. Slowly whisk in 1 cup chicken broth then 1 cup milk. Bring to a simmer and whisk until smooth and creamy (2 min). Add spinach and stir until wilted (1 min). Add 1/2 tsp salt and 1/8 tsp pepper or season to taste.
  • Add sliced chicken, sautéed mushrooms and drained pasta and toss to combine. Season to taste if needed and serve with parmesan cheese.

CHICKEN FLORENTINE STYLE

Time 30m

Yield 4 servings

Number Of Ingredients 10

4 boneless skinless chicken breasts
Salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons (3/4 stick) unsalted butter
2 tablespoons shallots, sliced
1 tablespoon chopped garlic
1 1/2 cups dry white wine
1 cup whipping cream
1 tablespoon chopped fresh Italian parsley
2 (10-ounce) packages frozen cut-leaf spinach, thawed, drained

Steps:

  • Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
  • Melt 2 tablespoons of butter in the same skillet over medium heat. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute. Add the wine. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes. Stir in the parsley. Season the sauce, to taste, with salt and pepper. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce.
  • Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 1/2 cups all-purpose flour
Kosher salt and freshly ground black pepper
1/4 cup milk
2 large eggs
2 cups panko breadcrumbs
4 boneless, skinless chicken breasts
5 tablespoons butter
5 tablespoons olive oil
8 ounces mozzarella, sliced
2 cups red and yellow cherry tomatoes
6 cups fresh baby spinach
3 cloves garlic, minced

Steps:

  • Preheat the oven to 375 degrees F.
  • Make a breading assembly line with 3 separate dishes: flour seasoned with salt and pepper, milk and eggs whisked together and panko seasoned with salt and pepper. Season the chicken breasts with salt and pepper, then bread them by dredging in the flour, then dipping in the egg mixture and finally coating in the crumbs. Set aside.
  • Melt 4 tablespoons of the butter with 4 tablespoons of the olive oil in a large skillet over medium heat. Brown the chicken breasts on the first side for 3 to 4 minutes, being careful not to burn them. Flip and brown them for another 3 to 4 minutes. Remove to a rack placed over a baking sheet and transfer to the oven to finish cooking, about 5 minutes.
  • Remove the chicken from the oven and turn on the broiler. Top the chicken with the mozzarella slices and broil until the cheese is melted.
  • Heat a small skillet over medium-high heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Add the tomatoes, sprinkle with salt and pepper and toss to cook quickly until the tomatoes start to break apart, about 2 minutes. Add the spinach and garlic, then stir/toss to wilt the spinach, 2 to 3 minutes. Spoon the tomato/spinach mixture over the chicken and serve.

4 tablespoons unsalted butter, plus 2 tablespoons melted
1 1/2 pounds boneless, skinless chicken breast, cut crosswise into 1/2-inch-thick strips
1 small onion, finely chopped (1 cup)
8 ounces cremini mushrooms, sliced (about 2 1/2 cups)
3 tablespoons unbleached all-purpose flour
3 cups whole milk, room temperature
9 ounces shredded medium-sharp cheddar (3 cups)

CHICKEN FLORENTINE

With a little practice and a little added flavor, a humble chicken breast can be anything you want.

Provided by Mark Bittman

Categories     dinner, main course

Time 45m

Number Of Ingredients 7

Chicken breasts
Extra-virgin olive oil
Butter
Flour
Spinach
White wine
Heavy cream, sour cream or yogurt

Steps:

  • Put a large skillet over medium-high heat for 2 or 3 minutes.
  • Add 2 tablespoons extra-virgin olive oil and 2 tablespoons butter to the skillet and swirl it around
  • Put about .25 cup of flour on a plate. When the butter foam subsides, dredge the chicken in flour, shaking to remove the excess.
  • Add the breasts to the skillet and cook so there is a constant sizzle but no burning.
  • Cook, turning once, until the chicken is browned on both sides and nearly cooked through, about 5 minutes per side.
  • Transfer the chicken to a plate and cover loosely with foil to keep warm.
  • Add 1 pound spinach to the skillet and cook, undisturbed, until the liquid from the spinach evaporates completely.
  • With the heat still on medium-high, add .5 cup of white wine to the skillet and let it bubble, stirring, until it is reduced by half, about 2 minutes.
  • Wait 30 seconds, then stir in .5 cup heavy or sour cream (yogurt is fine if you keep the heat low). Turn heat to low, stirring, until slightly thickened.
  • Return the chicken to the skillet, turn in the sauce and serve.

CHICKEN FLORENTINE/DIVAN

Chicken Florentine/Divan image

This is the absolute favorite dinner of choice in my family! We always make up some extra, smaller casserole dishes to freeze and have later (don't add the corn flakes until you are ready to heat it)......great to bring back to college!

Provided by Mary Anne

Categories     Chicken

Time 1h20m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 whole chicken breasts (boneless, skinless - cooked and cut into bite-sized pieces)
3 (10 ounce) boxes frozen cut spinach, thawed and squeezed (use broccoli for Chicken Divan)
cooking spray (Pam)
1 can cream of mushroom soup
1 1/2 cups Hellmann's mayonnaise
2 teaspoons lemon juice
1 1/2 teaspoons curry powder
1 cup mild cheddar cheese, shredded
corn flakes

Steps:

  • Boil the chicken breasts until they are cooked (20-30 minutes) then cut them into bite-sized pieces.
  • Preheat oven to 350 F degrees.
  • Mix the soup, mayonnaise, lemon juice, and curry powder in a bowl.
  • Spray a 9 X 13 casserole dish with PAM.
  • Layer the casserole first with spinach then with chicken.
  • Cover with sauce.
  • Top with cheese and finally with corn flakes.
  • Bake for approx.
  • 30-40 minutes until cheese is melted and sauce bubbles.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and prevent any mishaps.
  • Cook the chicken properly: The chicken should be cooked through but not overcooked. Overcooked chicken will be dry and tough. You can check the chicken is cooked by inserting a meat thermometer into the thickest part of the breast. The internal temperature should read 165 degrees Fahrenheit.
  • Use fresh vegetables: Fresh vegetables will give your dish the best flavor and texture. If you can't find fresh vegetables, you can use frozen vegetables, but make sure they are thawed before using.
  • Don't overcrowd the pan: When you are cooking the chicken and vegetables, don't overcrowd the pan. This will prevent the food from cooking evenly.
  • Season to taste: Always season your dish to taste. This means adding salt, pepper, and other spices until the dish is flavorful but not too salty or spicy.

Conclusion:

Chicken Florentine Divan is a classic dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you are looking for a quick and easy weeknight meal or a special dish for a dinner party, Chicken Florentine Divan is sure to please.
