MAMAW'S CHICKEN AND RICE CASSEROLE

Mamaw's Chicken and Rice Casserole image

I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

NEVER-FAIL CHICKEN-FLAVOR WHITE RICE

Never-Fail Chicken-Flavor White Rice image

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 7

3 tablespoons butter or 3 tablespoons margarine
1 small onion
1 tablespoon minced garlic (optional or to taste)
salt and black pepper
1/4 teaspoon dried thyme
2 cups converted white rice
3 cups chicken broth

Steps:

  • Melt butter or margarine in a saucepan with a tight-fitting lid.
  • Saute the onion and garlic with thyme until soft (about 3-4 minutes).
  • Add in rice and stir with wooden spoon for 5 minutes to coat in the butter.
  • Slowly add in chicken broth and bring to a boil, reduce heat and season with black pepper; cover tightly and simmer on top of the stove for about 15-17 minutes, or until the rice is tender.
  • Season with salt.

Tips:

  • Choose the right rice: Long grain rice, such as basmati or jasmine, is best for this recipe. It cooks up fluffy and separate, and it has a mild flavor that won't overpower the other ingredients.
  • Use fresh, flavorful ingredients: The better the quality of your ingredients, the better your rice will taste. Look for fresh vegetables that are crisp and colorful, and use a good quality chicken broth.
  • Don't overcrowd the pan: When you add the rice to the pan, make sure there is enough space for each grain to cook evenly. If the pan is too crowded, the rice will clump together and cook unevenly.
  • Let the rice rest before serving: After the rice is cooked, let it rest for a few minutes before serving. This will allow the rice to absorb all of the flavors from the broth and vegetables.

Conclusion:

Chicken flavored rice mix is a delicious, easy to make dish that is perfect for a crowd. It can be served as a main course or a side dish, and it is always a crowd-pleaser. With a few simple tips, you can make the best chicken flavored rice mix possible.
