Tips:

  • Choose the Right Chicken: Use boneless, skinless chicken breasts or thighs for a lean and flavorful soup. You can also use rotisserie chicken for a quick and easy option.
  • Use Fresh Veggies: Fresh bell peppers, onions, and corn add vibrant color and flavor to the soup. If you don't have fresh veggies on hand, you can use frozen or canned vegetables instead.
  • Don't Overcrowd the Pan: When cooking the chicken and vegetables, don't overcrowd the pan. This will prevent the ingredients from cooking evenly and can make the soup watery.
  • Use a Good Quality Broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or a combination of both.
  • Season to Taste: Season the soup with salt, pepper, chili powder, cumin, and garlic powder to taste. You can also add other seasonings, such as cayenne pepper or paprika, to taste.
