CHICKEN ENCHILADA SOUP

Chicken Enchilada Soup image

This soup is so easy to throw together and is really tasty. It gets quite a bit of heat from the enchilada sauce so be careful about adding extra spice. I serve with cheese quesadillas for a filling meal. Enjoy!

Tips:

  • Shred the chicken ahead of time: This will save you time when you're ready to make the soup. You can shred cooked chicken using two forks, a hand mixer, or a stand mixer fitted with the paddle attachment.
  • Use a variety of vegetables: This will add flavor and texture to the soup. Some good options include onions, peppers, carrots, celery, and corn.
  • Don't be afraid to experiment with different spices: Chili powder, cumin, and oregano are all good choices, but you can also add others to taste.
  • Use a good quality broth: This will make a big difference in the flavor of the soup. If you don't have any homemade broth on hand, you can use store-bought broth, but be sure to choose a low-sodium variety.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop.
  • Serve the soup with your favorite toppings: Some good options include sour cream, cheese, avocado, and cilantro.

Conclusion:

Chicken enchilada soup is a delicious and easy-to-make soup that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying soup that the whole family will enjoy.
