CHICKEN ENCHILADA DIP

I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.

Tips:

  • When choosing tortillas, look for ones that are soft and pliable. Corn tortillas are a traditional choice, but you can also use flour tortillas if you prefer.
  • Be careful not to overfill the tortillas. If they are too full, they will be difficult to roll up and may fall apart.
  • If you are using a baking dish, be sure to grease it lightly before adding the roll-ups. This will help to prevent them from sticking.
  • Serve the roll-ups immediately, while they are still warm and gooey. You can garnish them with sour cream, salsa, or guacamole if desired.
