BALSAMIC CHICKEN DRUMETTES

Balsamic Chicken Drumettes image

Provided by Giada De Laurentiis

Categories     appetizer

Time 2h45m

Yield 4 to 6 servings

Number Of Ingredients 9

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
5 sprigs of rosemary
5 garlic cloves, halved
10 to 12 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
  • Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.
  • Cook's note: I like the rosemary and garlic flavors in the background. Brushing the cooked drumettes with the reduced marinade helps the flavors along. Also, re-moistening helps the parsley and the seeds to adhere.

Bourbon-Glazed Chicken Drumettes with Blue Cheese Dipping Sauce image

Buffalo wings, all grown up.

Provided by Lora Zarubin

Yield Makes 30

Number Of Ingredients 10

2 tablespoons (1/4 stick) butter
1 cup chopped onion
3 garlic cloves, peeled, thinly sliced
1 cup bourbon, divided
1 cup ketchup
1/2 cup hot pepper sauce (such as Crystal)
1/4 cup tomato paste
3 tablespoons (packed) golden brown sugar
30 chicken drumettes (about 4 pounds)
Blue Cheese Dipping Sauce

Steps:

  • Melt butter in heavy large saucepan over medium-high heat. Add onion and garlic; sauté until golden, about 5 minutes. Add 3/4 cup bourbon; boil until most of liquid is absorbed, 6 to 8 minutes. Whisk in 1/4 cup bourbon, ketchup, hot pepper sauce, tomato paste, and brown sugar. Bring to boil. Reduce heat and simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Season marinade with salt and pepper. Remove marinade from heat; cool to room temperature.
  • Place chicken drumettes in 15 x 10 x 2-inch glass baking dish. Pour marinade over and turn drumettes to coat. Cover and refrigerate overnight.
  • Preheat oven to 375°F. Line baking sheet with foil or parchment paper. Place cooling rack atop prepared baking sheet. Arrange drumettes on rack, spacing slightly apart. Spread any remaining marinade from dish over drumettes. Sprinkle with salt and pepper. Bake drumettes (still on cooling rack) until cooked through and brown in spots, about 45 minutes. Transfer drumettes to serving platter. Serve Blue Cheese Dipping Sauce alongside.

Tips:

  • Choose the right chicken drumettes: Look for drumettes that are plump and have a good amount of meat on them. Avoid drumettes that are too small or have a lot of bone.
  • Marinate the chicken: Marinating the chicken in the ginger-plum sauce for at least 30 minutes helps to tenderize the chicken and infuse it with flavor.
  • Cook the chicken over medium heat: Cooking the chicken over medium heat helps to prevent it from drying out. If you cook the chicken over too high heat, it will brown too quickly and the inside will be undercooked.
  • Use a meat thermometer: To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Serve the chicken with your favorite sides: Chicken drumettes in ginger-plum sauce can be served with a variety of sides, such as rice, noodles, or vegetables.

Conclusion:

Chicken drumettes in ginger-plum sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the ginger-plum sauce is tangy and sweet. This dish is sure to be a hit with your family and friends.
