Linda Getz is a dear sailing friend of mine. She and her husband Mark invited Dave and me to stay with them at their condo on Big Boulder Lake in Pennsylvania. Linda's Chicken Cutlets with Mushrooms and Pearl Onions was our dinner one night, and it was delicious. She had found this recipe in Cooking Light a few years ago. The cutlets are an easy but elegant supper and the sauce tasty due in part to the wine. After we came home from that trip, she told me that the cutlets also make excellent leftovers. But don't be surprised if these are eaten up the first go around

Four 6-ounce boneless, skinless chicken breasts, cut in half & tenderized*
Salt and pepper
4 tablespoons flour
3 tablespoons olive oil
1 cup frozen pearl onions, thawed and drained
8 ounces quartered button mushrooms
1 cup white wine
1 cup chicken stock
2 tablespoons butter
1 teaspoon thyme

Steps:

  • Warm the oven to 170 degrees F. On a plate combine the flour, salt, pepper and thyme. Place a frying pan on the stove and add the olive oil. Dredge the chicken cutlets in the flour mixture shaking off excess. Fry the chicken over medium high heat in the pan in two batches until golden brown. Place on a baking pan and keep warm in the oven.
  • In the same frying pan, add the butter and button mushrooms. Sauté for a few minutes and then add the pearl onions. Return the chicken to the pan and add the chicken stock and white wine. Cook over medium heat for a few minutes until the sauce thickens. This serves 6-8 persons. *You can have your butcher tenderize the chicken breasts or use your favorite mallet.

  • Cut each chicken breast half in half horizontally to form 8 cutlets. Heat a large skillet over medium-high heat. Sprinkle chicken evenly with 1/4 teaspoon salt and pepper. This French-inspired chicken dish isn't exactly weeknight fare, but it is sophisticated comfort food that is well worth the effort. First, boneless chicken thighs or breasts are pounded into cutlets, marinated in garlic, lemon juice and thyme (up to 6 hours, but even a short sit will do nicely), then breaded and fried. They are then dressed in a rich yet delightfully piquant sauce of mushrooms, shallots, garlic, Dijon mustard, white wine and balsamic vinegar that is a welcome contrast to the richness of the fried chicken. Serve with a crisp green salad (and a potato gratin or pommes Anna if you're feeling particularly ambitious). If you'd prefer to fry the chicken 30 minutes or so in advance and keep it in the oven at 175 degrees, that'll work beautifully. 4 cloves garlic, minced
6 boneless, skinless chicken thighs, about 2 pounds, pounded flat

6 sprigs fresh thyme plus 1 tablespoon thyme leaves
1/3 cup chopped shallots
12 ounces small button mushrooms, quartered
2 tablespoons Dijon mustard
1/4 cup dry white wine
1 tablespoon good quality balsamic vinegar
1/3 cup flour
2 eggs, beaten
3/4 cup dry bread crumbs
4 tablespoons grapeseed oil
6 lemon wedges

Steps:

  • Combine lemon juice, half the olive oil and half the garlic in a shallow dish that can hold chicken in a single layer. Add chicken, turn to coat, dust with salt and pepper and top with thyme sprigs. Cover and refrigerate about 6 hours.
  • About 45 minutes before serving, heat remaining olive oil in a 10-inch skillet. Add shallots and remaining garlic and sauté on medium until soft. Sauté chicken cutlets on medium until golden brown, about 3 minutes per side in 2 shifts. Remove to a serving platter as they are done. Tent with foil to keep warm.

2 medium yellow onions, thinly sliced (about 4 cups)

Cook undisturbed for 4 to 5 minutes, then combine the chicken and vegetables and cook, stirring occasionally, until the chicken is cooked through, about 10 minutes more. (Reduce the heat to medium if the onions look like they are burning at any point.)
  • Add the remaining 2 teaspoons sherry vinegar, stirring and scraping up anything on the bottom of the skillet. Season to taste with salt.
