Four 6-ounce boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
4 tablespoons salted butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup dry white wine
2 heaping tablespoons grainy mustard
1 cup low-sodium chicken broth
1/2 cup chopped mixed fresh herbs, such as dill, parsley or chives, plus more for garnish
Garlic Spinach, recipe follows
2 tablespoons olive oil
2 garlic cloves, minced
Two 10-ounce packages baby spinach leaves
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Juice of 1/2 lemon

Steps:

  • Slice the chicken breasts in half horizontally so that you have 8 thinner chicken breast cutlets. Sprinkle both sides of each cutlet with salt and pepper.
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-high heat until hot. Add half the chicken cutlets and cook until golden brown and completely cooked through, 3 to 4 minutes per side. Remove the cutlets to a plate and set aside. Cook the remaining cutlets in the same manner.
  • Reduce the heat to medium. Add the garlic to the skillet and stir until golden brown, about 1 minute. Carefully pour in the wine and allow it to simmer and reduce by half, 1 to 2 more minutes.
  • Stir in the mustard, followed by the chicken broth. Add the remaining 2 tablespoons butter and stir until the sauce begins to thicken, 1 to 2 minutes. Season the pan sauce with salt and pepper. Add the herbs and stir.
  • Return the chicken cutlets to the skillet, turning them in the sauce to coat and to rewarm them. Serve on top of the Garlic Spinach. Spoon more sauce from the skillet over them and garnish each plate with more fresh herbs.
  • Heat the olive oil in a large, high-sided skillet over medium-high heat until hot, then add the garlic and give it a quick stir. Add the spinach and let it cook down, turning often to bring the wilted pieces to the top, until softened, a minute or two.
  • Cook until completely wilted, a minute or two more, then season the spinach with salt and pepper, as well as the lemon juice. Toss to evenly combine everything.

CHICKEN CUTLETS WITH HERBED CRANBERRY SAUCE

CHICKEN CUTLETS WITH HERBED CRANBERRY SAUCE image

Categories     Chicken

Yield 4 people

Number Of Ingredients 8

4 chicken breasts or thighs
3 tbls butter
1/4 cup chopped shallots or green onions
1 bay leaf
1/4 cup dry red wine
2/3 cup whole-berry canned cranberry sauce
1/2 cup low-salt chicken broth
1 tbls balsamic or red wine vinegar

Steps:

  • Season chicken with salt and pepper Melt the butter in a frying pan, add the chicken and cook until cooked through and brown on both sides. Transfer chicken to a plate. Add onions to the skillet and sauté for 1 minute. Add wine and bring to a boil, scraping up any pieces on the pan. Boil until the mixture reduces to a thick glaze, about 4 minutes. Add cranberry sauce, broth and vinegar and cook until sauce thickens slightly, about 3 minutes. Return chicken and any juices to the skillet. Simmer until heated through. About 1 minute. Season with salt and pepper. Serve over rice.

Tips:

  • To ensure the chicken cutlets cook evenly, make sure they are all of uniform thickness. If needed, use a meat mallet to gently pound them until they are of equal size.
  • For a crispier coating, press the seasoned flour mixture firmly onto the chicken cutlets. You can also double-coat the chicken cutlets for an extra crunchy texture.
  • To prevent the chicken cutlets from sticking to the pan, make sure the oil is hot enough before adding them. Additionally, avoid overcrowding the pan, as this will cause the chicken to steam instead of fry.
  • To make the herbed cranberry sauce, use fresh cranberries for the best flavor. If fresh cranberries are unavailable, you can use frozen cranberries that have been thawed and drained.
  • For a sweeter sauce, add more honey or maple syrup to taste. You can also add a pinch of ground cinnamon or nutmeg for a warm, festive flavor.

Conclusion:

These chicken cutlets with herbed cranberry sauce are a delicious and easy-to-make dish that is perfect for any occasion. The chicken is tender and juicy, while the crispy coating and tangy sauce add a burst of flavor. Whether you are serving them for a weeknight dinner or a special holiday meal, these chicken cutlets are sure to be a hit.
