4 skinless, boneless chicken breast halves
1 tablespoon peanut oil
1 teaspoon curry powder
4 plain croissants, split in half
4 tablespoons chutney
4 tablespoons mayonnaise
lettuce
tomato slices
red onion slices
salt and pepper to taste

Steps:

  • In a skillet over medium heat, add the curry powder and stir a few seconds until it becomes fragrant. Stir in the oil. Cook the chicken in the seasoned oil for about 5 to 8 minutes on each side, or until done.

2-1/2 cups cubed cooked chicken
1/2 cup chopped walnuts
1/3 cup finely chopped celery
2 tablespoons grated onion
1/2 cup mayonnaise
2 tablespoons sour cream
3/4 teaspoon curry powder
1/8 teaspoon Cajun seasoning
Lettuce leaves
4 to 6 croissants, split

Steps:

  • In a food processor, cover and process chicken until finely chopped. Transfer to a large bowl; add the walnuts, celery and onion. , In a small bowl, combine the mayonnaise, sour cream, curry powder and Cajun seasoning. Pour over chicken mixture; toss to coat. Cover and refrigerate for at least 1 hour. Place lettuce and about 3/4 cup chicken mixture on each croissant.

2 tablespoons onions, grated
1/2 cup mayonnaise
2 tablespoons sour cream
3/4 teaspoon curry powder (I use only 1/4 teaspoon)
1/8 teaspoon cajun seasoning
lettuce leaf
4 -6 plain croissants, split

Steps:

  • In food processor or blender, process chicken until finely chopped. Transfer to a large bowl, add walnuts, celery and onion.
  • In a small bowl, combine mayonnaise, sour cream, curry powder, and Cajun seasoning. Mix well.
