It sounds complicated, but it's not. My mom used to make this, and got the recipe from my grandma. Some of the directions I had to interpret. I also tried Cheddar, but it left it with a weird grainy texture, so I think American cheese would be best. I have no idea where this recipe came from, but it's something nice for date...

CREPES RECIPE
3/4 c flour
1 egg, slightly beaten
1 c skim milk
1 Tbsp butter, melted
FILLING
2 c diced cooked chicken
1 -10 oz package frozen broccoli, cooked and drained
SAUCE
1/4 c water
1/4 c onion, finely chopped
1/4 c flour
1 c skim milk
1/4 tsp salt
1 1/2 c american cheese, shredded
1-4 oz can(s) sliced mushrooms

Steps:

  • 1. Crepes Recipe Mix all ingredients together and beat till smooth. Butter 6 inch skillet and heat over med-high heat. Remove from heat. Pour in 2 Tablespoons batter. Spread over pan, cook until golden brown on one side only. Heat pan and repeat till all batter has been used.
  • 2. Sauce Recipe In pan combine onion and water and cook covered for 5 minutes. Do not drain. Mix together milk, flour and salt in separate bowl then add to onion mixture. Cook and stir until bubbly. Add cheese stir until melted. Reserve 1/2 cup of sauce. Add drained mushrooms to sauce and set aside on warm burner.
  • 3. Filling and Assembly Combine chicken, broccoli and the 1/2 cup reserved sauce. Spoon about 1/4 cup filling onto unbrowned side of each crepe. Roll each crepe up and place seam side up in a 13x9x2 baking dish. Cover and back at 350 degrees for 20 minutes. Meanwhile heat mushroom sauce. Serve over crepes. Makes 6 servings, 2 crepes each.

16 ounces boneless skinless chicken breasts, cooked and chopped
1 (10 ounce) package frozen chopped broccoli, thawed
1/2 cup sour cream
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
1 large egg
1/2 cup flour
1 tablespoon flour
1 tablespoon margarine, melted
1 dash salt
2 tablespoons flour
1 cup milk
1/2 cup chicken broth
1 tablespoon tarragon
3 dashes Worcestershire sauce
salt
pepper

Steps:

  • In a blender combine all the crepe ingredients and blend on high for one minute, refrigerate for 20 minutes.
  • While the batter is chilling, prepare the filling.
  • In a medium bowl combine all filling ingredients together.
  • Spray a nonstick sauté pan with Butter flavored spray.
  • Heat pan on medium high heat for one minute.
  • Pour a scant 1/4 crepe batter into the pan using a circular motion.
  • You will want the crepe to be approximately 6" in diameter.
  • Slant the pan to evenly distribute the batter.
  • Cook until the crepe is golden- about 1 minute per side.
  • Remove and place in between sheets of waxed paper.
  • Continue process until you have 6 crepes.
  • Place 1/3 cup filling mixture on crepe and roll up tightly.
  • Place seam side down in a microwave safe dish.
  • Save any additional filling that is left over.
  • To Prepare The Sauce: Place flour in a saucepan.
  • Gradually add the milk and chicken broth, stirring with a whisk until well blended.
  • Stir in tarragon, salt, pepper and Worcestershire sauce.
  • Add any remaining filling mixture to sauce.
  • Cook over medium heat for 8 minutes or until sauce is thickened and coats the back of a spoon.
  • Cover crepes loosely with plastic wrap and microwave on high for approximately 3 minutes.
  • Pour sauce over crepes and serve.

Looked at all the other Chicken Crepe recipes and mine is not like the others! I first found this recipe in my mom's old cook book, but have totally tweaked it and made it my own! It's one of my favorites to eat, and my family gets so excited when I make these! I usually double or triple the gravy to have lots of it to pour over the crepes and enough left over to have with mashed potatoes.

1 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups milk
1 egg
1 tablespoon butter, melted
1 1/2 cups finely cut up cooked chicken
1/2 cup diced carrot
1/2 cup diced celery
1/2 cup diced onion
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
2 cups chicken broth

Steps:

  • Crepes:.
  • Mix flour, baking powder and salt.
  • Stir in remaining ingredients.
  • Beat with electric mixer until smooth.
  • Lightly butter small skillet; heat over medium heat until bubbly.

  • Immediately rotate skillet until thin film of batter covers bottom.

  • Blend in flour and salt.

  • Boil and stir 1 minute.

  • Sauté carrots, celery and onion in a little bit of oil in a skillet until tender.
  • Mix chicken, vegetables, and just enough gravy to coat everything nicely in a bowl.
  • Put about 1/4 cup of mixture on center of each crepe and roll up.
  • Place crepes seam side down in a 9x13 baking dish.
  • Pour remaining gravy over crepes.
  • Bake uncovered in 350°F oven until crepes are hot, about 20 minutes.
  • Can be frozen before baking, just thaw completely before putting in the oven.

1 tablespoon extra-virgin olive oil
2 cloves garlic, thinly sliced (1 tablespoon)
5 ounces baby spinach (5 cups, lightly packed)
Gruyere Bechamel
1 1/2 cups cooked chicken, shredded
1/2 cup Gruyere, shredded
Chopped fresh parsley, for serving

Steps:

  • Preheat oven to 400 degrees with rack in center. Heat oil in a large skillet over medium-high. Add garlic and cook until golden, 1 to 2 minutes. Add spinach and stir until wilted. Transfer to a work surface, chop, and set aside.
  • Mix 3/4 cup bechamel with chicken. Working with one at a time, place crepe on a work surface. 1/4 cup all-purpose flour
1 1/4 cups whole milk
1 1/4 cups chicken broth
1/4 cup chopped shallot
1/2 cup chopped mushrooms
2 cups finely chopped cooked chicken (9 oz)
3 tablespoons medium-dry Sherry
1 lb thin asparagus, trimmed
For crêpes
3/4 cup all-purpose flour
1/2 teaspoon salt
Pinch of freshly grated nutmeg
1 1/4 cups whole milk
1 whole large egg
1 large egg yolk
1 tablespoon unsalted butter, melted
For topping
1 large egg yolk
5 tablespoons chilled heavy cream
1 tablespoon unsalted butter
Special Equipment
a 3-quart flameproof ceramic or enameled shallow baking dish

Steps:

  • Make filling:
  • Heat 5 tablespoons butter in a 2-quart heavy saucepan over moderate heat until foam subsides. Whisk in flour and cook roux, whisking, until pale golden, about 2 minutes. Gradually add milk and broth, whisking, and bring to a boil, whisking. Reduce heat and simmer gently, whisking frequently, until velouté sauce is silky and thick, about 25 minutes. Reserve 1/2 cup sauce for topping.

  • Heat a dry 7- to 8-inch nonstick skillet over moderately high heat until hot, then brush very lightly with some melted butter. Spoon about 2 tablespoons batter into skillet, tilting to coat bottom. (If batter sets before skillet is coated, reduce heat slightly for next crêpe.) Cook until underside is lightly browned, 6 to 10 seconds, then loosen crêpe with a spatula and flip. Cook until just cooked through, about 20 seconds, and transfer to a plate. Make 15 more crêpes in same manner, brushing skillet with melted butter as needed and stacking crêpes on plate.
  • Assemble and bake crêpes:
  • Preheat oven to 350°F.
  • Spread 1/4 cup filling across center of 1 crêpe and roll into a cylinder. Transfer, seam side down, to buttered baking dish, then assemble more crêpes in same manner, fitting them snugly. Bake in middle of oven 15 minutes.
  • Make topping while crêpes bake:
  • Stir together yolk, 2 tablespoons cream, and reserved 1/2 cup sauce until smooth. Beat remaining 3 tablespoons cream with a whisk until it holds soft peaks, then fold into yolk mixture.
  • Spoon topping over crêpes and broil 5 to 6 inches from heat until lightly browned, about 2 minutes.
  • Heat butter in skillet, then add reserved asparagus tips and toss until warm.
  • Put 2 crêpes on each of 8 plates and top with asparagus tips.

Chicken with cream of mushroom and sour cream sauce baked with dried beef and bacon. My father is a firefighter and brought this one home when I was a child. I have loved it ever since. It is most important that you use FROZEN chicken and not fresh otherwise the dish will not work. This a nice recipe because it is super fast to prepare and then just walk away from until it is done cooking.

1 (2 lb) bag frozen boneless skinless chicken (tenders or breast)
1 -16 ounce sour cream

1 (4 ounce) jar dried beef
1 (16 ounce) package bacon (any type you like)
1 teaspoon garlic salt (optional)
1 teaspoon ground pepper (optional)

  • -Preheat oven to 375.
  • -Mix the Sour Cream with the 2 cans of Cream of mushroom Soup. (add garlic salt and pepper to taste if you like more flavor (I highly recommend it).
  • -Line a 13 x 9 glass baking dish with the dried beef. (edges slightly overlapping so that the whole bottom is covered).
  • -Place FROZEN chicken on top of the dried beef in baking dish (chicken should not be sitting on top of eachother, just one layer).
  • -Pour Sour Cream and Cream of Mushroom mixture over FROZEN chicken so that it covers.
  • -Place Four (4) strips of bacon over the top width wise.
  • -Put baking dish in 325 degree oven for 2 hours.
  • -After cooked place on a bed of cooked Egg Noodles and enjoy.
